Lemon Mug Cake

Lightly grease two 10-ounce microwave-safe mugs and set aside
- For Cake Batter:
- 3 tablespoons oil
- 2 tablespoons white chocolate chips
- 1/4 cup sugar
- 1 egg
- 1 tablespoon milk
- 2 tablespoons lemon juice
- 1/2 teaspoon almond extract
- Zest of 1 lemon
- 5 tablespoons self-rising flour
- Pinch of salt
- For Lemon Syrup:
- 1 tablespoon sugar
- 2 teaspoons lemon juice
- 1 teaspoon water
- For Glaze: (optional)
- 1/4 cup powdered sugar
- 1 teaspoon lemon juice
Peppermint Cheesecake

Grease an 8 or 9 inch springform pan
- For the Crust:
- 2 c finely crushed Oreo cookies
- 4 T butter, melted
- For the Filling:
- 4 (8oz) packages cream cheese, softened
- 3 T flour
- 1-1/2 c sugar
- 4 eggs
- 1/4 c milk
- 1/2 t peppermint extract
- 1 t vanilla
- 8 oz sour cream
- For Topping:
- 1/4 c candy canes, crushed
- 1/2 c semisweet chocolate chips
- 1/2 t shortening
Butternut Squash Bisque

In a large saucepan, melt butter
- 2 TBSP butter
- 1 large onion, diced
- 1 1/2 pounds butternut squash, cut into 1 inch cubes
- 1 large apple or pear (I use one of each)
- 2 cups of chicken or vegetable stock
- 1 cup half & half (I use fat free)
- 1 tsp allspice (I always add more)
- 1 tsp pumpkin pie spice (I always add more)
- 1 tsp nutmeg
- 1/4 tsp salt
- 1/8 tsp white pepper
- Garnish with sour cream
Blackberry-Key Lime Trifle

FOR THE FILLING: Process sugar and lime zest in food processor until sugar turns bright green, about 30 seconds
- 1/4 cup (1 3/4 ounces) granulated sugar
- 1 tablespoon grated lime zest plus 1 cup juice (8 limes), plus 5 limes sliced 1/8 inch thick
- 8 ounces cream cheese, softened
- 1 (14-ounce) can sweetened condensed milk
- 1/3 cup instant vanilla pudding mix
- 1 teaspoon vanilla extract
- 12 whole graham crackers, broken in half
- 1 recipe Large-Batch Lightly Sweetened Whipped Cream (see related content)
- 30 ounces (6 cups) blackberries
Veggie Primavera Spaghetti Squash

Preheat oven to 400 degrees
- 1 spaghetti squash (at least 3 1/2 lbs.)
- 1 cup thinly sliced onion
- 1 cup thinly sliced bell pepper
- 1 cup sliced mushrooms
- 1 cup chopped broccoli
- 1 cup chopped asparagus
- 1 tbsp. olive oil or grapeseed oil
- 1 1/2 cups cherry tomatoes, halved
- 1 tbsp. chopped garlic
- 1 1/2 tsp. Italian seasoning
- 1/4 tsp. garlic powder
- 1/4 tsp. onion powder
- 1/4 tsp. each salt and black pepper
- 3 wedges The Laughing Cow Light Creamy Swiss cheese
- 1/4 cup grated Parmesan cheese
Blueberry Cake

- 3/4 cup granulated sugar|sugar
- 1/4 cup vegetable oil
- 1 egg
- 1/2 cup milk
- 2 cups flour
- 2 tsp baking powder
- 1/2 tsp salt
- 2 cups blueberries, well drained
- 1/4 cup butter
- 1/2 cup granulated sugar|sugar
- 2 cup flour
- 1/2 tsp cinnamon
Chili

- 1 LB Hamburger
- 2 oz Sausage
- 1 Bell Pepper
- 1 Large Onion
- 1 15oz can Dark Red Kidney Beans
- 1 28oz Can Diced Tomatoes
- 1 15oz can Rotel with Chilis
- 1/2 Cup Ketchup
- 1 tsp Chili Powder
- 1/2 tsp Garlic
- 1/2 tsp Dry Mustard
- 1/2 tsp Paprika
- Salt & Pepper
- 1 TBS Tony Chacheries Creole Seasoning
- 1/2 tsp Red Pepper Flakes
Black Bean fries with Avocado Dipping Sauce

Preheat oven to 425 degrees
- 4 Gardein black bean burger patties cut into 1/4 in strips
- Olive oil or coconut oil nonstick spray
- 1/2 avocado
- 1/4 cup Greek yogurt
- 1/4 cup cilantro
- 1 TBSP lime zest
- 1 TBSP sea salt
- Juice of 1 lime
Wet Burritos

Crumble ground beef into a skillet over medium-high heat
- 1 pound ground beef
- 1/2 cup chopped onion
- 1 clove garlic, minced
- 1/2 teaspoon cumin
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1 (4.5 ounce) can diced green chile peppers
- 1 (16 ounce) can refried beans
- 1 (15 ounce) can chili without beans
- 1 (10.75 ounce) can condensed tomato soup
- 1 (10 ounce) can enchilada sauce
- 6 (12 inch) flour tortillas, warmed
- 2 cups shredded lettuce
- 1 cup chopped tomatoes
- 2 cups shredded Mexican blend cheese
- 1/2 cup chopped green onions
Corn Cakes
