Crawfish Etouffee

1. Stir together the first five ingredients in a small bowl
- 1 tablespoon paprika
- 2 teaspoons kosher salt
- 1 teaspoon black pepper
- 1 teaspoon dried thyme
- 1/2 teaspoon cayenne pepper
- 1/2 cup vegetable oil
- 1 cup (4 oz.) all-purpose flour
- 1 poblano chile, seeds removed, diced
- 3 celery stalks, diced
- 1 medium-size yellow onion, diced
- 3 garlic cloves, chopped
- 1 jalapeno chile, seeds removed (if desired), diced
- 2 cups seafood stock
- 2 pounds frozen peeled crawfish tails, thawed and rinsed
- 1/4 cup chopped fresh parsley
- 2 tablespoons fresh lemon juice
- 1 tablespoon Worcestershire sauce
- 8 cups cooked white long-grain rice
- 1/2 cup sliced scallions, white and light green parts only
- 2 teaspoons hot sauce, plus more for serving
Tilapia Tacos

HEAT oven to 375ºF. SPRAY baking sheet with cooking spray
- 1 pkg. (6 oz.) FRESH TAKE Southwest Three Cheese Recipe Cheese Breadcrumb Mix
- 6 fresh tilapia fillets (1-1/2 lb.)
- 2 cups shredded purple cabbage
- 1/2 cup pineapple salsa
- 12 corn tortillas (6 inch), warmed
Beef Enchilada

Heat oven to 350°F. Spray 13x9-inch (3-quart) baking dish with cooking spray
- 1 lb ground beef
- 1 can (10 oz) Old El Paso™ mild enchilada sauce
- 1 jar (16 oz) black bean or corn salsa
- 8 Old El Paso™ flour tortillas for burritos (8 inch)
- 2 cups shredded Mexican four-cheese blend (8 oz)
Chipotle Butternut Squash Soup

In a Dutch oven, saute the squash, carrots, onion and celery in butter for 5 minutes
- 1 medium butternut squash (3-1/2 to 4 pounds), peeled, seeded and cubed
- 2 medium carrots, chopped
- 1 large onion, chopped
- 2 celery ribs, chopped
- 3 tablespoons butter
- 2 medium tart apples, peeled and cubed
- 3 garlic cloves, minced
- 3 cans (14-1/2 ounces each) chicken broth
- 1 cup unsweetened apple cider or juice
- 1 chipotle pepper in adobo sauce, seeded and chopped
- 1/2 teaspoon salt
- 1/2 cup sour cream

Southwestern Egg Rolls

Cook ground beef in a skillet
- 1 lb ground beef
- 2 c corn ( canned or frozen if thawed)
- 15 oz can of black beans (rinsed and drained)
- 10 oz frozen spinach ( thawed and squeezed dried)
- 1/2 c shredded cheddar cheese ( or cheese of your choice)
- 4 oz can of green chiles drained
- 1 c chopped green onions
- 1/4 c chopped cilantro
- 1 tsp ground cumin
- 1/2 tsp chilli powder
- 1 tsp salt
- 1/2 tsp pepper
- 1/4 tsp cayenne red pepper
- 1 pkg egg roll wrappers (or more if you need them)
- 2 beaten eggs
- oil or any oil
