Veggie Kung Pow "chicken"

Combine gardein mandarin orange chick’n sauce with rice wine vinegar, soy sauce, and pepper flakes in a bowl
- 1 pkg gardein mandarin orange crispy chick'n (with sauce)
- 1 tsp rice wine vinegar
- 1 tsp soy sauce
- 1/2 tsp crushed red pepper flakes
- 2 tsp sesame oil
- 3 cloves garlic, minced
- 1 inch ginger root, peeled and minced
- 3 green onions, finely chopped
- 1/4 cup dry roasted peanuts, chopped
Tomato and Avocado Salad with Queso Fresco

Arrange the tomatoes, onion and avocado on a platter
- 4 large beefsteak or heirloom tomatoes cut into wedges
- 1/4 red onion slivered
- 1 ripe avocado sliced
- 1/2 teaspoon kosher or sea salt plus more to season the dressing
- Freshly cracked black pepper to taste
- 2 tablespoons white distilled vinegar
- 2 tablespoons lime juice
- 1/2 teaspoon brown sugar
- 1/4 cup extra virgin olive oil
- 1/2 cup queso fresco crumbled

- 1 teaspoon minced canned chipotle chili in adobo sauce, plus 1 tsp. sauce
- 2 teaspoons lime juice
- 2 large zucchini (about 1 lb.)
- 1/2 cup all-purpose flour
- Salt
- 1 teaspoon pepper
- 1 teaspoon Italian seasoning
- 2 large eggs, beaten
- 1 cup panko
- 1/3 cup grated Parmesan
- Vegetable oil, for cooking

- 1 15.5-oz. can black beans, rinsed and drained
- 2 tablespoons lemon juice
- 2 tablespoons olive oil
- Salt and pepper
- 4 6-inch corn tortillas
- 1 cup loosely packed grated Monterey Jack
- 1 cup bottled salsa, hot, medium or mild
- 2 tablespoons unsalted butter
- 4 large eggs
- Chopped avocado, optional
- Sour cream, optional
Baked Stuffed Brussels Sprouts

Cut Brussels sprouts length wise & bring a pot of water to a boil
- 12-15 large brussels sprouts
- 1 c Parmigiano-reggiano, grated or just parm cheese is fine also
- 3/4 c mozzarella cheese shredded (or 3/4 cup of ricotta) or your favorite shredded cheese)
- 1/4 c Italian bread crumbs
- 1/2 c panko bread crumbs
- 2 tsp basil, dried
- 2 tsp thyme, dried
- 3-5 clove garlic minced or minced garlic to your taste I like a lot of garlic
- 1/4 tsp pepper
- 2-3 Tbsp olive oil
- 4-6 slice bacon (cooked & crumbled) or as much as you like
- pinch of sea salt

- One 15-oz. can black beans, drained and rinsed
- 1/2 cup unsweetened cocoa powder
- 1/2 cup (about 4 large) egg whites
- 1/3 cup unsweetened applesauce
- 1/3 cup canned pure pumpkin
- 1/4 cup Truvia spoonable calorie-free sweetener (or another no-calorie granulated sweetener; see HG FYI)
