- 1/2 head(s) (medium) romaine lettuce, halved lengthwise and sliced 1/2 inch thick
- 1/2 cup(s) roughly chopped fresh mint leaves
- 1 large lemon, cut into 8 wedges

- 1 Tbsp. mayonnaise
- 2 leaves romaine lettuce
- 1/8 cup shredded carrots
- 1/8 cup sliced red bell pepper

- 1/2 tsp salt
- 3/4 c butter room temp
- 1/2 c cane sugar
- 2 tsp vanilla extract
- 1 egg
- 1 1/2 c semi-sweet chocolate chips
- 1 1/2 c confectioners' sugar
Pumpkin Spice Cake with Maple Glaze Recipe

Place the first 10 ingredients in a large bowl; beat on low speed for 30 seconds
- GLAZE:
- 1 package yellow cake mix (regular size)
- 1 can (15 ounces) solid-pack pumpkin
- 4 eggs
- 1/2 cup canola oil
- 1/3 cup sugar
- 2 tablespoons ground cinnamon
- 1 teaspoon ground ginger
- 1 teaspoon ground allspice
- 1 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 2 cups confectioners' sugar
- 1/4 cup 2% milk
- 2 tablespoons maple syrup
- 1/2 teaspoon maple flavoring
- 1/2 cup Diamond of California Chopped Pecans, toasted
Spice Rub

Combine all ingredients. Sprinkle on everything from chicken to sweet potato wedges
- 1 tsp cumin
- 1 tsp cinnamon
- 1 tsp cayenne pepper

Directions Combine: 1 1/2 cups flour, sugar, cinnamon, nutmeg and yeast
- 5 1/2 c all purpose flour, amount may vary from 4 3/4 cups
- 1/3 c sugar
- 1 1/2 tsp cinnamon
- 1/4 tsp freshly grated nutmeg
- 2 pkg active dry yeast
- 3/4 c milk
- 1/2 c water
- 1/4 c butter or margerine
- 3 eggs
- 1 c raisins, (or you decide the amount)
- 8 oz mixed dried candied fruit (instead of raisins) wonderful for easter!
Blueberry Carrot Muffins

Preheat your oven to 350 degrees F
- 1 cup white whole wheat flour
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1 tsp cinnamon
- Pinch of salt
- 1/4 cup applesauce
- 1/4 cup plain yogurt
- 1 tsp vanilla extract
- 1/2 cup unsweetened almond milk
- 4 Tbsp maple syrup
- 1 Tbsp melted coconut oil
- 2/3 cup shredded carrots
- 2/3 cup blueberries
Earl Grey Tea Cake

1. Grease a 9 x 5 pan. In a bowl whisk together the flour and salt to blend
- 2 c flour
- 1 tsp salt
- 1 c unsalted butter
- 1 1/3 c sugar
- 2 Tbsp loose earl grey tea leaves ( about 5 bags)
- 1 tsp vanilla
- 5 eggs
- 3/4 c water (these 3 ingredients for glaze)
- 4 earl grey teabags
- 2 c sifted powdered sugar
Weight Watchers Chocolate Marshmallow Fudge

- 1 2/3 cups sugar
- 2/3 cup fat-free evaporated milk
- 2 tablespoons reduced-calorie margarine
- 12 ounces semisweet chocolate, chopped (about 1 1/2 cups)
