1. Adjust an oven rack to the middle position and heat the oven to 400degrees F
- Sauce:
- 1 (14.5-oz) can diced tomatoes
- 1 tbsp extra-virgin olive oil
- 2 garlic cloves, minced
- 1/4 tsp table salt
- 1/8 tsp red pepper flakes (optional)
- 1 tbsp chopped fresh basil
- Filling and Pasta:
- 8 oz whole-milk or part-skim ricotta cheese (about 1 cup)*
- 3 oz whole-milk mozzarella cheese, shredded (about 3/4 cup)
- 2 oz Parmesan cheese, grated (about 1 cup)
- 1 large egg, lightly beaten
- 1 tbsp chopped fresh basil
- 1/4 tsp table salt
- 1/8 tsp ground black pepper
- 6 no-boil lasagna noodles*
- * We prefer Barilla no-boil lasagna noodles because their delicate texture makes them easy to roll into tubes. Do not substitute fat-free ricotta.

- 1 16oz. can refried beans
- 1 16oz. can sour cream
- 1 package (1.25oz) McCormick Original Taco Seasoning
- 2 Cups (8 oz.) shredded cheddar cheese
- 1 tomato, chopped (about 1 cup)
- 1/2 cup sliced green onion
- 1 cup guacamole
- 1/2 cup sliced black olives (I omit)
- Tortilla chips

- 1 teaspoon sugar

- 1/2 pound elbow macaroni, cooked,

- 3/4 cup chopped green peppers
- 3/4 cup red chopped peppers
- 1/4 cup finely chopped carrots
