Shish Tawouk

Mix ingredients. Marinate chicken for at least 3 hours and up to 12 hours
- 3 tablespoons fresh lemon juice
- 2 tablespoons tomato paste
- 3 tablespoons vegetable or light olive oil
- 1/4 cup garlic paste ( I purchased at a Middle Eastern store)
- 1 tablespoon coriander (I didn’t use)
- Thin sliced chicken breasts
Chicken Parmesan by Pietro

Marina Sauce: Heat oil in a large Dutch oven or other heavy pot over medium heat
- Marinara Sauce
- 1/3 cup olive oil
- 1 medium white onion, finely chopped
- 1/2 Merlot (original recipe calls for dry white wine)
- 2 - 32 ounce cans whole peeled tomatoes, should use San Marzano
- Kosher salt and freshly ground pepper
- (My additions: tablespoon of sugar and 2 tablespoons of butter.)
- Chicken: THESE AMOUNTS ARE NOT SET IN STONE. JUST BREAD THE CHICKEN
- 2 - 8 ounce skinless, boneless chicken brisket
- 3 large eggs
- 3 cups plain fine dry breadcrumbs
- 1 cup flour
- 3 cups vegetable oil
- 4 ounces Parmesan, grated, preferably on the large star-shaped of a box grater (about 1/2 cup), although you should add as much cheese as you want
Basic Breaded Chicken Recipe

This process can be used with any chicken parts
- Chicken parts (If I'm using breasts, I cut them lengthwise into cutlet so they cook quickly, usually in the browning of them.)
- Dish of flour
- Beaten egg mixed a little water
- Mixture of 2/3 cup Progresso Italian bread crumbs and 2 tablespoons Kraft Parmesan cheese in the green jar.
- Oil to brown

Berry Blend Salad

This salad is a mix of tasty greens complimented by the addition of snow peas, strawberries and muenster cheese
- 2 cups torn romaine lettuce
- 1 cup torn escarole
- 1 cup torn red leaf lettuce
- 1 cup snow peas
- 1/2 cup sliced fresh strawberries
- 1/2 cup diced muenster cheese
- 1/2 cup raspberry vinegar
- 1/2 cup canola oil
- 2 teaspoons Dijon mustard
- 1/4 teaspoon dried oregano
- 1/4 teaspoon black pepper
- Artificial sweetener to taste
Make Ahead Mashed Potatoes

I love these potatoes because they can be made the day before Thanksgiving
- 8 medium potatoes
- 1 cup sour cream
- 8 ounces chive and onion cream cheese
- 1 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 4 tablespoons butter
- milk
- The original recipe calls for an additional 1/4 cup chives, 2 garlic cloves, minced, 1 1/2 teaspoon onion powder, and 1/2 to 1 cup sliced green onions. It also adds crumbled bacon on top.

Blueberry Blintz Souffle

According to the original recipe, this can be reheated
- 6 eggs
- 1 teaspoon vanilla
- 1/2 cup orange juice
- 1/2 cup sugar or honey (I've only used sugar)
- 1 1/2 cups sour cream (Original recipe says fat-free doesn't work too well. I've only used regular.)
- 1 stick of butter, melted
- 2 packages of frozen blintzes (I used Gold brand. I bought them at Kroger on 14 Mile and Haggerty. In the past, I have not been able to find them at the Kroger on Union Lake.)

Pillsbury Sticky Buns

Grease a bundt pan. Combine brown sugar and cinnamon in a separate bowl
- 1/2 cup maple syrup
- 3 tablespoons butter, melted
- 1/3 cup packed light brown sugar
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg (I didn't add this.)
- 1/4 cup chopped pecans, optional (I didn't add.)
- 1/4 cup chopped almonds, optional (I didn't add.)
