Apple Bites

Preheat oven to 350 degrees
- 2 cups graham cracker crumbs
- 8-10 tablespoons butter, melted
- 4 cups peeled, cored and chopped apples
- 1 / 3 cup white sugar
- 1/4 cup brown sugar
- 2 1/4 tablespoons flour
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- caramel topping from store
- mini muffin tin papers ( not in original recipe but these tended to fall apart when I made them.
Blueberry-Lemonade Iced Tea

Excellent sugar-free drink for summer
- 16 ounces frozen unsweetened blueberries
- 4 cups water
- 10 orange & black pekoe tea bags (Our Family brand at Hillers)
- 3 cups blueberry juice (I used Ocean Spray Sugar-free)
- 1 (1/2 ounce) container sugar-free lemonade mix- See note at the beginning of the recipe
Sautéed Black Olives with Tomatoes

Rinse and drain olives (I buy them pitted)
- 1 cup (6 ounces) Kalamata olives
- 3 medium tomatoes, cored and chopped into 3/4 inch pieces
- 1 teaspoon salt
- 2 tablespoons olive oil
- 2 cloves garlic, peeled and minced
- Freshly ground pepper
- 2 tablespoons chopped fresh flat-leafed parsley
Oatmeal Raisin Cookies (Matthew's favorite)

Preheat oven to 350 degrees
- Whisk together
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- Cream wet ingredients
- 1 cup unsalted butter, softened
- 1 cup sugar
- 1 cup light brown sugar, firmly packed (the original recipe called for dark brown sugar.)
- 2 large eggs
- 2 teaspoons vanilla
- Then stir in
- 3 cups oats (not instant)
- 1 1/2 cups raisins (I bought raisins in a smaller package that are meant to be used in cookies because they are more moist than regular raisins. I used the whole package.)
Creamy Au Gratin Potatoes

Preheat oven to 400 degrees
- 4 russet potatoes, sliced into 1/4 inch slices
- 1 onion, finely diced
- Salt and pepper to taste
- 3 tablespoons butter plus 1 tablespoon to sauté the onions
- 3 tablespoons all-purpose flour
- 1/2 teaspoon salt
- 2 cups milk
- 1 1/2 cups shredded Cheddar cheese (6 ounces)
Herb-Gruyere Biscuits

You can use any combo of herbs and cheese
- 2 1/4 cup all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon chopped thyme leaves
- 1/2 teaspoon finely chopped sage leaves
- 1 cup shredded Gruyere
- 1 1/2 sticks unsalted butter - 10 tablespoons cut into 1/2 inch cubes and chilled
- 2 tablespoons melted butter
- 1 cup buttermilk, chilled
- Flaky salt, such as Maldon for sprinkling

- 1/4 cup oil (for frying)

Bacon Meatballs

- Meatballs:
- 8 slices Applewood smoked bacon (I used the already cooked, just heat in microwave.)
- 1 pound ground chuck
- 1 tablespoon Worcestershire sauce
- 1 package onion soup mix
- 1/2 cup panko
- 1 tablespoon beef stock (I just used water.)
- 10 fresh mozzarella balls (small ones packed in water)
- Marinara:
- 1/4 cup olive oil
- 1 medium yellow onion, finely chopped
- 2 tablespoons minced garlic
- 2 tablespoons chopped fresh basil leaves
- 2 (14 oz.) cans crushed tomatoes
- 2 (14 oz.) cans diced tomatoes in puree
- 1/2 teaspoon crushed red pepper flakes
- 1 tablespoon chicken bouillon

- 1 cup each of diced onions and green onions
- 7 tablespoons extra-virgin olive oil, divided
- 2 packages of frozen chopped spinach, thawed
- 1/2 cup chopped fresh flat leafed parsley
- 1/4 cup chopped fresh dill
- 1/2 pound phyllo dough (20 sheets)
- 2 eggs beaten
- 8 ounces feta, crumbled (I use Presidents brand crumbled feta from Hillers.)
- 1/2 cup grated Parmesan cheese
- 1 teaspoon salt
- 1 egg yolk
- 1 tablespoon milk
