Microwave Peanut Brittle

Butter large baking sheet
- 1 1/2 cups unsalted dry-roasted peanuts (about 7 1/2 ounces)
- 1 cup sugar
- 1/2 cup light corn syrup
- pinch of salt
- 1 tablespoon butter
- 1 teaspoon vanilla extract
- 1 1/4 teaspoon baking soda
Chocolate Fudge

1. Place chocolate chips, sweetened condensed milk and butter in large microwaveable bowl
- 3 cups semisweet chocolate chips
- 1 (14 ounce) can sweetened condensed milk
- 1/4 cup butter
- 1 cup chopped toasted pecans or walnuts
Tomato, Cucumber, Avocado Salad

I made this salad for Rosh Hashanah, 2017
- 1 1/2 cups chopped tomatoes - I used cherry tomatoes
- 1 cucumber, peeled and diced - I used an English cucumber
- 1 avocado, diced
- 4 ounces feta cheese, cubed - I didn't add this for Rosh Hashanah
- 2 tablespoons minced red onion
- 1 handful of parsley, minced, about 2 tablespoons
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar
- Salt and pepper to taste
Beef Tenderloin

- 3 tablespoons olive oil
- 1 tablespoon chopped parsley
- 1 tablespoon chopped shallots
- 1 tablespoon coarse sea salt
- 1 teaspoon herbes de Provence
- coarsely ground pepper
- 4 1/2 pound beef tenderloin
Lebanese Tabbouleh

Stir together bulgur and 1 tablespoon olive oil in a heatproof bowl
- 1/2 cup fine bulgur
- 3 tablespoons olive oil
- 1 cup boiling-hot water
- 2 cups finely chopped fresh curly leaf parsley (about 3 bunches with stems discarded)
- 2 medium tomatoes, cut into 1/4 inch pieces
- 1/2 seedless cucumber, peeled, cored, and cut into 1/4 inch pieces
- 1-2 bunches of scallions, thinly sliced
- 3 tablespoons fresh lemon juice
- 1/4 cup chopped fresh mint (optional)
- 3/4 teaspoon salt
- 1/4 teaspoon black pepper

- 2 1/2 cups all-purpose flour
- 2 cups white sugar
- 1 tablespoon pumpkin pie spice
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 eggs, slightly beaten
- 1 cup canned pumpkin purée
- 1/2 cup vegetable oil
- 2 cups peeled, cored and chopped apple. ( I chopped mine pretty small, but not fine.)
Sticky Buns

Melt and mix first three ingredients together
- 1/2 stick of butter
- 1/3 cup brown sugar
- 1 package butterscotch pudding (not instant)
- 1 package of Rhodes frozen rolls. You will use about 16 rolls to cover the pan

Mixed Greens with Pecans, Goat Cheese and Dried Cranberries

Whisk vinegar, mustard, and thyme in a small bowl
- 1/4 cup red wine vinegar or raspberry vinegar
- 1 tablespoon Dijon mustard
- 1 teaspoon sugar
- 3/4 cup olive oil
- 2 5oz. bags mixed baby greens
- 1 1/2 cups dried cranberries (about 7 ounces)
- 1 small red onion, very thinly sliced
- 1 cup toasted pecan halves
- 1 5.5 ounce log soft fresh goat cheese, crumbled (about 1 1/4 cups) (with sweet peppers)
No Egg Chocolate Ice Cream

This is a not a dark chocolate ice cream, but more like a soft serve
- 1 can sweetened condensed milk
- 1/2 gallon chocolate milk
- 1 8 ounce carton of whipped topping
Chicken with Mushrooms and Mozzarella

Although I literally "never" use canned soups, I thought I would try this recipe
- 8 boneless, skinless chicken breasts, sliced in half
- 4 cups sliced mushrooms. (I used Portabella and button)
- 2 cans Campbell’s golden cream of mushroom soup
- 3/4 cup of chicken broth
- 1 cup Italian flavored bread crumbs
- 2 tablespoons butter
- 3 eggs beaten
- 2 teaspoons olive oil
- 1 teaspoon minced garlic
- 1 teaspoon garlic powder
- salt and pepper to taste
- (May add a teaspoon each of dry basil and dry rosemary)
- Mozzarella cheese (shredded) to taste
