I made this salad for Rosh Hashanah, 2017

  • 1 1/2 cups chopped tomatoes - I used cherry tomatoes
  • 1 cucumber, peeled and diced - I used an English cucumber
  • 1 avocado, diced
  • 4 ounces feta cheese, cubed - I didn't add this for Rosh Hashanah
  • 2 tablespoons minced red onion
  • 1 handful of parsley, minced, about 2 tablespoons
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • Salt and pepper to taste

  • 1/2 cup fine bulgur
  • 3 tablespoons olive oil
  • 1 cup boiling-hot water

  • 2 medium tomatoes, cut into 1/4 inch pieces

Although I literally "never" use canned soups, I thought I would try this recipe

  • 8 boneless, skinless chicken breasts, sliced in half
  • 4 cups sliced mushrooms. (I used Portabella and button)
  • 2 cans Campbell’s golden cream of mushroom soup
  • 3/4 cup of chicken broth
  • 1 cup Italian flavored bread crumbs
  • 2 tablespoons butter
  • 3 eggs beaten
  • 2 teaspoons olive oil
  • 1 teaspoon minced garlic
  • 1 teaspoon garlic powder
  • salt and pepper to taste
  • (May add a teaspoon each of dry basil and dry rosemary)
  • Mozzarella cheese (shredded) to taste
