Lychee Pina Colada

Add all the ingredients to a blender and blend until smooth
- 1 1/2 cups crushed pineapple in juice
- 1 can Reduced Fat Coconut Milk
- 8 lychees and 1/4 cup syrup (from 1 can Lychee in syrup or Lychee Natural Drink with fruit)
- 1 tablespoon rosewater
- 1 tablespoon agave nectar
- 1/2 cup rum, or more to taste
Crunchy Onion Chicken

This chicken is so tender and moist
- 11/2 cups French's French Fried Cheddar Onions (You can use the regular but it's not as tasty.)
- 1 pounds boneless, skinless chicken breasts (I use the ones with 15% chicken broth added.)
- 1 egg, beaten
Pear Salad with Feta, Bacon, Hazelnuts and Shallot Dressing

Dressing: A day ahead, heat 1 tablespoon oil in large nonstick skillet over medium heat
- 1 tablespoon plus 1/2 cup olive oil
- 3/4 cup thinly sliced shallots
- 8 bacon slices
- 5 tablespoons Sherry wine vinegar, or vinegar of your choice
- 10 cups loosely packed greens (spinach or mixed lettuce)
- 3 ripe pears, halved, cored, thinly sliced
- 3/4 cup crumbled feta cheese
- 1/3 cup husked toasted hazelnuts (or nut of your choice) coarsely chopped
Panko Crusted Chicken Breasts

Look for panko in the Asian food section of your supermarket
- 4 boneless, skinless chicken breasts
- 1 cup panko
- 1 cup finely chopped pecans (optional)
- 6 tablespoons butter, divided
- 1/4 cup minced shallots
- 3/4 cups low-salt chicken broth
- 2 tablespoons chopped fresh parsley
Fresh Strawberry Pie

You can use whatever pie crust you want for this pie
- 1 1/2 cups water
- 3/4 cup sugar
- 1 1/2 tablespoon cornstarch
- 1 small package strawberry jello
- 1 quart fresh strawberries, cleaned and sliced or left whole.
Feta and Brussell Sprouts Salad

- 1/2 cup Brussels sprouts, shaved and roasted
- Salt and pepper to taste
- 2 cups Brussells spouts, end removed and shaved
- 3 tablespoons golden raisins
- 2 ounces Bulgarian feta
- 2 tablespoons white balsamic vinegar
- 1/4 cup olive oil
- 3 tablespoons pine nuts, toasted
Weight Watchers Key Lime Pie

1. In a large bowl, dissolve gelatin in boiling water
- 1 reduced fat graham cracker crust
- 1 (1/16 ounce) package sugar-free lime gelatin
- 1/4 cup boiling water
- 1 (8 ounce) container fat-free wjoed topping (Cool Whip)
- 2 (6 ounce) key lime pie yogurt
Country Style Chicken Kiev

1. Preheat oven to 375 degrees
- 2/3 cups butter
- 1/2 cup fine dry bread crumbs (Progresso Italian works well)
- 2 tablespoons Parmesan cheese (Kraft in the green jar works best.)
- 1/2 teaspoon garlic salt
- 4 skinless, boneless chicken breast (You can also do this with any part of the chicken, skin and all.)
- 1/4 cup chicken broth or white wine
- 1/4 cup chopped green onions
- 1/4 cup chopped fresh parsley
Glazed Corned Beef

Place corned beef in a large pot and cover with water
- Glaze:
- 1 corned beef brisket
- 1 medium onion, large chop
- 1/4 cup butter
- 1 cup packed light brown sugar
- 2/3 cup ketchup
- 1/3 cup white vinegar
- 2 tablespoons prepared mustard
- 2 teaspoons prepared horseradish
Herb and Feta Phyllo Wrapped Shrimp

These do take a long time to make, but worth the effort
- 1 pound large raw shrimp (26 to 30 per pound)
- 1 small bunch Italian (flat leaf) parshley leaves, chopped fine
- 1 small bunch chives, chopped fine
- zest of 2 lemons (I forgot to add when I made it.)
- 1 package phyllo dough, thawed
- 4 ounces feta cheese, crumbled fine (I put it in the food processor to crumble fine enough)
- 1 stick butter, melted
- Salt and pepper to taste
