Strawberry-Almond Cream Tart

This recipe comes from Cooking Light
- Crust:
- 36 honey graham crackers
- 2 tablespoons sugar
- 2 tablespoons butter, melted
- 4 teaspoons water
- Cooking spray
- Filling:
- 2/3 cup (about 5 ounces) 1/3-less fat cream cheese
- 1/4 cup sugar
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon almond extract
- Topping: 6 cups small fresh strawberries, hulled and divided
- 2/3 cup sugar
- 1 tablespoon cornstarch
- 1 tablespoon fresh lemon juice
- 2 tablespoons sliced almonds, toasted
Skillet Shrimp and Orzo

This is a great one pan dinner that looks beautiful
- 2 tablespoons extra-virgin olive oil
- 6 cloves of garlic, minced
- 3 cups halved grape tomatoes (about 1 pound)
- Salt and pepper
- 3/4 pound orzo (I've used regular and whole grain orzo, also mixed them.)
- 3 1/4 cup low-sodium chicken broth (I've only used vegetable broth and loved it)
- 1 pound large shrimp, peeled and deveined
- 1 cup fresh basil, torn (I've never had it to add, so I can't comment on that part.)
Chopped Salad Appetizer Shells

Italian chopped salad is mounded into cooked pasta shells
- Salad:
- 8 ounces jumbo pasta shells
- 4 cups chopped romaine lettuce
- 1/2 cup chopped fresh basil (optional)
- 1 cup chopped fresh tomato
- 3/4 cup chopped peeled cucumber
- 3 ounces Italian salami, chopped (optional)
- 4 ounces crumbled feta cheese
- Dressing:
- 3 tablespoons olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon mixed Italian herbs
- 1/8 teaspoon sugar
- salt and pepper to taste
Cranberry White Wine Sangria

Combine all ingredients in a pitcher one hour before serving
- 1 Granny Smith apple, finely chopped
- 1 Braeburn apple, finely chopped
- 1 heaping cup fresh cranberries
- 1 bottle Pinot Grigio, chilled
- 1/2 cup white grape juice, or to taste
- 1/4 cup sugar, or to taste
- 1 can club soda

- 3 (8 oz.) packages cream cheese, softened
- 1/2 cup sugar
- 2 tablespoons unsalted butter, softened
- 3 large eggs
- 1 tablespoon all-purpose flour
- 11/2 cups sour cream
- 2 teaspoons vanilla extract
- 2/3 cup crushed hard peppermint candies
- Sour Cream Cake Layers
- 1 (18.25 oz.) package white cake mix
- 2 large eggs
- 1 (8 oz.) container sour cream
- 1/3 cup vegetable oil
- 1/2 cup water
- White Chocolate Mousse Frosting
- 2/3 cup sugar
- 1 cup white chocolate morsels
- 2 cups whipping cream
- 2 teaspoons vanilla
Pear, Apple and Pecan Salad

In a large bowl, whisk together the vinegar, oil, and orange juice
- Dressing:
- 2 apples such as Gala or Honeycrisp
- 2 red pears, hard but sweet
- 1/2 cup pecans or walnuts, toasted and coarsely chopped
- blue cheese crumbles
- mixed greens
- 2 1/2 tablespoons orange juice (I usually buy a couple oranges and juice them.)
- 2 tablespoons unseasoned rice vinegar (If you like a stronger taste, use a white or red vinegar.)
- 2 tablespoons extra-virgin olive oil
- salt and pepper to taste
Hawaiian Meatballs

1. Preheat oven to 350 degrees 2
- Meatballs:
- 2 pounds lean ground beef
- 2 large eggs
- 1/2 cup fine dry breadcrumbs
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1 1/2 teaspoons Worcestershire sauce
- 1/4 teaspoon garlic powder
- Sauce:
- 1 cup packed light brown sugar
- 3 tablespoons cornstarch
- 1 3/4 cups reserved pineapple juice, plus water
- 1/4 cup white vinegar
- 1 1/2 tablespoons soy sauce
- 1 1/2 teaspoons Worcestershire suace
- 1 (14 oz.) can pineapple tidbits, juice drained and reserved (see above)
Orange Picatta Chicken

Dredge chicken breasts in flour
- 2 chicken breasts, sliced crosswise and pounded
- 1/4 cup flour for dredging chicken
- Oil for sautéing
- 2 shallots, minced
- 1 clove garlic minced
- 1/2 cup white wine
- 2 teaspoons Dijon mustard
- 3/4 cup orange juice (I used half orange juice -the best you can buy - and half chicken broth)
- 4 tablespoons unsalted butter, cut into pats and dredged in flour
- 4 thin orange slices, halved
- 1/4 cup slivered almonds, optional
- 1 tablespoon parsley, minced, optional
Pretzel Chicken Tenders

These tenders can be prepared ahead, then frozen before cooking
- 3 pounds chicken tenders
- 2 cups buttermilk
- 1 tablespoon dried basil
- 1 tablespoon dried oregano
- 1 tablespoon granulated garlic

- 1 1/2 cups smoked almonds (canned)
- 12 large sourdough hard pretzels
