"Shrimp Cocktail" Phyllo Triangles

Combine ketchup, horseradish, sugar, Worcestershire, juice and salt and pepper
- Combine:
- 1/3 cup ketchup
- 2 teaspoons horseradish
- 1/2 teaspoon sugar
- 1 teaspoon Worchestershire sauce
- Juice of 1/2 lemon
- Salt and pepper to taste
- Stir in:
- 1/2 pound cooked shrimp, coarsely chopped
- For the Phyllo: butter/oil mixture
- Optional filling:
- 4 ounces cream cheese, softened
- 2 tablespoons scallions, minced
- 1 teaspoon garlic, minced
- Pinch of salt
- Dash of Tabasco
Layered Tomatoes with Feta and Basil Oil

You will need smaller tomatoes, as each serving is one tomato
- 1/3 cup extra-virgin olive oil
- 1/3 cup chopped fresh basil leaves
- 2 tablespoons finely chopped shallots
- 1 tablespoon balsamic vinegar
- 1 teaspoon sugar
- 6 tomatoes, each cut into 3 slices
- 6 ounces crumbled feta cheese
- 1/2 cup diced red onion
- Arugula or baby spinach
Corn Pudding

1. Combine first 4 ingredients
- 1/4 cup sugar
- 3 tablespoons all-purpose flour
- 2 teaspoons baking powder
- 2 teaspoons salt
- 6 large eggs
- 2 cups whipping cream
- 1/2 cup butter, melted
- 6 cups corn kernels (You can substitute 6 cups frozen whole kernels or canned shoe peg corn, drained.)
Roasted Cauliflower with Garlic

Preheat oven to 425 degrees
- 6 pounds cauliflower (3 heads) cut into 2 inch wide florets You can use all white, or a combination of white, green and purple cauliflower.
- 1/2 cup olive oil
- 4 garlic cloves, minced
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Baked Rice

Melt some of the butter and sauteed the finely chopped onion and any additional items you're going to add
- This is a basic rice recipe that you can add additional ingredients such as toasted pine nuts, vermicelli, etc.
- 1 stick butter
- 1 medium onion, minced
- 1 cup Uncle Ben's rice. (not instant)
- 2 cans of chicken broth (14.5 ounce cans)
Baked Blueberry-Pecan French Toast with Blueberry Sauce

In this recipe the French toast is soaked overnight like bread pudding
- For Syrup:
- a 24 inch baguette
- 6 large eggs
- 3 cups whole milk
- 1/2 teaspoon freshly grated nutmeg
- 1 teaspoon vanilla
- 1 cup packed light brown sugar
- 1 cup pecans, about 3 ounces
- 1/2 stick plus
- 1 teaspoon unsalted butter
- 1/4 teaspoon salt
- 2 cups blueberries, about 12 ounces
- 1 cup blueberries, about 6 ounces
- 1/2 cup pure maple syrup
- 1 tablespoon fresh lemon juice
Cherry Brie Tossed Salad

In a jar with a tight-fitting lid, combine dressing ingredients and shake until sugar is dissolved
- Dressing:
- 1 cup cider vinegar
- 1/2 cup sugar
- 1/4 cup olive oil
- 1 teaspoon ground mustard
- 1 1/2 teaspoon poppy seeds
- Salad:
- 2 tablespoons butter
- 3/4 cup sliced almonds
- 3 tablespoons sugar
- 8 cups torn romaine lettuce
- 8 ounces Brie or Camembert, diced
- 1 package (6 oz.) dried cherries
Fannie Farmer's Classic Baked Macaroni and Cheese

Don't skimp on the quality of the cheese, or you'll have an inferior dish
- Optional addition:
- 1 (8 ounce) package macaroni
- 4 tablespoons butter
- 4 tablespoons flour
- 1 cup milk
- 1 cup cream
- 1/2 teaspoon salt
- 2 cups cheddar cheese, shredded
- 1/2 cup breadcrumbs, buttered
- Combine 2 shallots and 3 cloves of garlic in a teaspoon of olive oil. Wrap them in a square of aluminum foil and roast at 350 degrees for about 20 minutes. Press to a paste.
