Cole Slaw

This is Mark's favorite cole slaw recipe
- 2 (8.5 ounce) packages of angel hair coleslaw mix
- 5 green onions, chopped
- 2/3 cup extra virgin olive oil or vegetable oil
- 1/4 cup white vinegar
- 1/4 cup water
- 1 large clove of garlic, minced
- 1 1/2 teaspoon salt
- 1 teaspoon Italian seasoning
Chocolate Tacos

Spread batter as evenly as possible on baking sheet
- For shells:
- 1/2 cup powdered sugar
- 1.1 ounces all purpose flour (about 1/4 cup)
- 3 tablespoons unsweetened cocoa
- 1 teaspoon cornstarch
- 1/4 teaspoon salt
- 3 tablespoons egg whites (I beat them slightly so I could measure better)
- 1 teaspoon 2% milk
- 1/4 teaspoon vanilla extract
- Cooking spray
- For outside of shells;
- 1/2 cup semisweet chocolate chips
- 1 teaspoon canola oil
- 1/2 cup finely chopped unsalted dry-roasted peanuts, divided
- 3 cups of vanilla low-fat ice cream
Ben & Jerry's French Vanilla Ice Cream

1. Whisk eggs in a mixing bowl until light and fluffy, 1 to 2 minutes
- 2 large eggs (I use Eggbeaters)
- 3/4 cup sugar
- 2 cups heavy cream
- I cup milk

Peanut Butter Chocolate Chip Cookies

1. Preheat oven to 325 degrees
- 1/2 cup sweet unsalted butter at room temperature
- 1/2 cup creamy peanut butter
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar
- 1 large egg
- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1 cup chocolate chips
Ancho-Chili Dusted Cod or Halibut

1. Mix ancho chili powder and all other spices except salt in a small bowl; place fish in a shallow dish or plastic...
- 2 pounds fish fillets: choose 4 that are approximately the same size and thickness
- 1/2 cup ancho-chili powder
- 2 tablespoons cumin
- 1 tablespoon each ground oregano, garlic powder and onion powder
- Salt to taste
- Neutral oil for brushing fish (canola, vegetable, or corn oil)
Stuffed Cabbage

1. Fill a large pot with water and bring to a boil
- Cabbage Rolls:
- 1 large head of green cabbage, about 2 pounds
- 2 pounds ground beef
- 1 pound ground pork (optional) I used pork
- 2 eggs, beaten
- 2 garlic cloves, minced
- 1 medium onion, grated
- 2 teaspoons salt
- 1/2 cup rice (I used brown rice) and cooked it before adding to meat
- Tomato Sauce
- 2 tablespoons butter or vegetable oil
- 1 clove garlic, minced
- 1 medium onion, chopped medium
- 2 15 ounce cans tomato sauce
- juice of one lemon
- 1/3 cup brown sugar (more if you like it sweeter)
- salt and pepper to taste
Streusel-Topped Blueberry Waffle Casserole

- 1 package (8 oz.) cream cheese, softened
- 1/4 packed light brown sugar
- 15 frozen waffles, thawed and cut into 1 inch pieces
- 1 1/2 cup fresh or frozen blueberries
- 8 large eggs
- 1 1/2 cups 2% milk
- 6 tablespoons butter, melted
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- Streusel
- 1/2 cup packed light brown sugar
- 1/3 cup all-purpose flour
- 1 teaspoon ground cinnamon
- 1/4 cup butter, softened
- 1/2 cup chopped pecans
Cape Cod Chopped Salad

For the dressing: whisk together the vinegar, orange zest and juice, mustard, maple syrup, and salt
- For the dressing:
- 8 ounces bacon, cooked and chopped into large pieces
- 8 ounces baby arugula
- 1 large apple, peeled and diced
- 1/2 cup toasted walnut or pecans, coarsely chopped
- 1/2 cup dried cranberries
- 6 ounces blue cheese, crumbled
- 3 tablespoons apple cider vinegar
- 1 teaspoon grated orange zest
- 2 tablespoons freshly squeezed orange juice
- 1 teaspoon Dijon mustard (originally recipe calls for 2 1/2 teaspoons)
- 2 tablespoons pure maple syrup
- kosher salt
- 2/3 cup good olive oil (can use any oil such as canola or vegetable)
Apple Pie Muffins

- TOPPING:
- 2 1/4 cups all purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 egg
- 1 cup buttermilk
- 1/2 cup butter, melted
- 1 teaspoon vanilla extract
- 1 1/2 cups packed brown sugar
- 2 cups diced apples
- 1/2 cup packed brown sugar
- 1/3 cup all purpose flour
- 1 teaspoon ground cinnamon
- 2 tablespoons butter, melted
Shrimp Saganaki

I found this recipe on Pinterest and made some adjustments to fit our taste
- 12 large shrimp
- 3 tablespoons olive oil
- 1/2 small red onion, diced
- 1/2 red or yellow pepper, diced
- 1/2 cup kalamata olives, diced or sliced
- 2 medium ripe tomatoes, diced (about 1 cup or so)
- 1/2 cup feta cheese, coarsely crumbled, plus a little more for the top
- 1 cup marinara sauce (I used Trader Joe's tomato and basil marinara)
- The amount of each ingredient is dependent on your individual taste. The original recipe also called for a tablespoon of chopped fresh oregano. 1 teaspoon dried oregano and a half teaspoon of crushed red pepper. Also, a splash of Ouzo may be added.
