- 2 large Yukon Gold potatoes, peeled, sliced into 1/2 inch slices,ends discarded
- 2 large red potatoes, peeled, sliced into 1/2 inch slices, ends discarded
- 2 sweet potatoes, peeled, sliced into 1/2 inch slices, ends discarded
- 1/2 cup extra-virgin olive oil
- Lawreys Seasoning Salt or spice of your choice
- fine sea salt
- one fresh rosemary sprig for each stack
Scalloped Sweet Potato Stacks

When I made them, I didn't use all the sweet potatoes that the recipe ca;;ed for
- 1 1/2 pound small sweet potatoes, peeled and thinly sliced
- 1 cup freshly shredded mozzarella or gruyere cheese, divided
- 2/3 cup heavy cream
- 1 garlic clove, minced
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Parmesan Scones

- 1 medium yellow onion, chopped - 3/4 cup
- 1 cup shredded Parmesan cheese - 4 ounces
- 2 cups biscuit baking mix such as Bisquick

- 1/3 cup plus 1 tablespoon heavy cream

Bring water to a boil in a large saucepan
- 1 pound Yukon Gold potatoes
- 1/2 teaspoon salt
- pinch of pepper
- 1 egg lightly beaten
- 1/4 cup leeks, finely chopped, sauteed in butter
- 2 tablespoons butter
Sweet Chicken Bacon Wraps

1. Preheat oven to 350 degrees
- 1 1/2 lbs. boneless skinless chicken breasts (I use Empire)
- 1 pound sliced bacon
- 3/4 cup firmly packed light brown sugar
- 2 tablespoons chili powder
Spanish Quinoa

Quinoa is a whole grain that contains more protein than any other grain
- 1 cup quinoa, rinsed in cool water, placed in a large frying pan and toasted over medium heat. Cook, shaking the pan for around 15 minutes or until the quinoa reaches a golden brown. Cool. Reserve for the rest of the recipe.
- 2 (14 1/2 ounce) cans diced tomatoes
- 2 tablespoons olive oil
- 2 medium onions, diced
- water
- 2 garlic cloves, minced
- 1 cup toasted quinoa (See above)
- 2 teaspoons chili powder
- 1/2 teaspoon sugar
- 2 tablespoons tomato paste
Bacon Wrapped Pork Tenderloin

Wrap the tenderloin in bacon, with the ends of the bacon slices on the bottom
- 3 pounds pork tenderloin
- 1 pound bacon
- 3/4 cups low sodium soy sauce
- 1 tablespoon minced onion
- 2 cloves garlic, minced (or garlic powder)
- 1 tablespoon white or wine vinegar
- 3/4 cups brown sugar
Roast Chicken Rotisserie Style
