Traditional Apple-Walnut Charoset

This is a standard charoset recipe with a little brown sugar added for depth
- 3 medium Gala or Fuji apples, peeled, cored and finely diced
- 1 1/2 cup walnut halves, lightly toasted, cooled and coarsely chopped
- 1/2 cup sweet red wine
- 1 1/2 teaspoons ground cinnamon
- 1 tablespoon packed brown sugar
Apple Bread Pudding

Preheat oven to 350 degrees and lightly grease a 9x13 pan
- 10 cups challah, in chunks
- 1 can evaporated milk
- 1 cup whole milk
- 1 cup half and half
- 8 eggs, lightly beaten
- 1 cup sugar
- 1/2 cup unsalted butter melted and cooled
- 2 teaspoons vanilla extract
- 1 teaspoon ground cinnamon
- 2 teaspoons baking powder
- 1/8 teaspoon salt
- 2 cup apples, peeled and coarsely chopped
Apple Strudel

Heat the oven to 375 degrees
- 1 egg
- 1 tablespoon water
- 2 tablespoons sugar
- 1 tablespoon all-purpose flour
- 1/4 teaspoon ground cinnamon
- 2 large Granny Smith apples, peeled, cored and thinly sliced
- 1/2 of a 17.3 ounch package of Pepperidge Farm Puff PastrySleets (1 sheet) thawed
- Confectioners' sugar
Meatloaf with Tomato Gravy

To prepare meatloaf: 1. Preheat oven to 350 degrees
- Meatloaf:
- 5 pounds ground meat: equal amounts of beef and pork
- 15 ounces of Italian bread crumbs
- 10 eggs
- 1 chicken bouillon cube, dissolved in 1/2 cup of hot water
- 1/2 cup finely grated Parmesan cheese
- chopped parsley
- salt and pepper
- Tomato Gravy:
- 2 tablespoons butter
- 4 cloves smashed garlic cloves
- 2 tablespoons flour
- 2 14 ounce cans of chicken stock
- 2 tablespoons tomato paste
- 1/4 cup red wine vinegar
- 1 - 14 ounce can whole tomatoes
- salt and pepper
- 1 tablespoon dried oregano

Dolmades with Yogurt-Mint Sauce

- Grape Leaves
- 1/4 cup plus 3 tablespoons olive oil
- 1 medium onion, chopped
- 3 large garlic cloves, minced
- 1 cup long-grain white rice
- 4 cups canned chicken broth

- 1/4 cup finely diced canned tomatoes

- 8 ounces* (1 cup) unsalted butter
- 7.6 ounces* (1 cup) granulated sugar
- 1 large egg
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 12.7 ounces* (3 cups) sifted all-purpose flour
- 1/4 teaspoon Kosher salt
- Butter, flour and sugar should be measured by weight and not volume. Measuring ingredients by volume is inaccurate and may lead to inconsistent results. The volume measurements, cups, is given for those who do not have a kitchen scale.
