Pearl Couscous with Olives and Roasted Tomatoes

Roast tomatoes and make dressing: Preheat oven to 250 degrees
- For roasted tomatoes and dressing:
- 2 pints red grape or cherry tomatoes
- 3 large garlic cloves, left unpeeled
- 1/4 cup extra-virgin olive oil
- 1/4 cup warm water
- 1 teaspoon fresh lemon juice
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- For couscous:
- 2 3/4 cups chicken broth
- 2 1/4 cups pearl (Israeli) coucous
- 1 tablespoon olive oil
- 1/2 cup Kalamata olives, pitted and chopped
- 1/3 cup chopped fresh flat-leaf parsley
- 1/4 cup chopped fresh mint
Apple, Dried Cherry and Walnut Salad with Maple Dressing

The salad has a creamy maple dressing that is delicious
- Maple Dressing:
- 1/4 cup mayonnaise
- 1/4 cup pure maple syrup
- 3 tablespoons Champagne vinegar or other white wine vinegar
- 2 teaspoons sugar
- 1/2 cup vegetable oil
- Salad:
- 1 5 ounce bag mixed baby greens
- 2 Granny Smith apples, peeled, cored, cut into matchstick-size strips
- 1/2 cup dried tart cherries
- 1/2 cup chopped walnuts, toasted
Oven Cooked Ribs with Dry Rub

Mix all the spices together
- 2 1/2 tablespoons chili powder
- 1 tablespoon ground cumin (Originally recipe called for 2 tablespoons of cumin and 1 tablespoon of ground coriander. )
- 1 tablespoon sea salt
- 1 tablespoon paprika
- 1 tablespoon dark brown sugar
- 1/4 teaspoon cayenne
- 1/2 teaspoon dry mustard
- 1/2 teaspoon garlic powder

- 1.5 ounces Gruyere cheese, grated
- 1 large egg
- 1/2 cup panko
- 1/4 cup whole milk
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 tablespoon honey
- 1/2 teaspoon salt
- 2 teaspoons soy sauce
- 1 teaspoon smoked paprika
- 1/2 teaspoon pepper
- 6 ounces thick cut bacon
- 3 tablespoons ketchup
- 1 tablespoon honey
- 1 teaspoon Worcestershire sauce
- 1 teaspoon Dijon mustard
Onion Rolls for Passover

These rolls can be made the day before and baked up fresh
- 1 small onion, cut in half
- 1 tablespoon chicken fat or margarine
- 1/2 cup oil
- 1 cup cold water
- 1 cup matzo meal
- 1 teaspoon salt
- 2 large eggs
- 1 egg for egg wash, optional
Marinara Pasta Sauce

This sauce can be ready in an hour, or you can keep it longer
- 1 large onion, chopped
- 1 tablespoon minced garlic
- 1 tablespoon dried basil (I use fresh, if I have it.)
- 2 teaspoons dried oregano
- 1 teaspoon dried chili pepper flakes (optional)
- 3 tablespoons olive oil
- 1 (6 ounce) can tomato paste
- 1 (28 ounce) can whole Roma tomatoes, undrained (break up with a fork before cooking. San Marzano are the best.)
- 1/3 cup dry red wine (I buy the small, individual ones to have on hand.)
- 1-2 teaspoons sugar
- 1 teaspoons salt (or to taste)
- 2 tablespoons of butter
- Black pepper to taste
Shrimp in Puff Pastry with Cheese and Bacon

- 1 package (5.2 ounces) garlic & herb spreadable cheese, softened
- 1 tablespoon finely chopped fresh parsley

- 3 - 28 oz. cans San Marzano whole peeled tomatoes
- 2 - 11.5 oz. cans V-8 juice
- 1/2 medium onion, medium dice
- 1-2 cloves of garlic, minced
- 2 tablespoons fresh lemon juice
- 2 tablespoons red wine vinegar
- 1/4 cup extra virgin olive oil
- 6-8 fresh basil leaves, rough chopped
- 2 teaspoons light brown sugar
- 1/2 cup yellow pepper, small dice
- 1/2 cup red pepper, small dice
- 1/2 cup orange pepper, small dice
- 1 cup green onions, sliced thin on a diagonal
- 1 cup English cucumber, peeled, small dice
- Seasonings:
- 1/2 - 1 teaspoon Frank's Hot Sauce, or to taste
- Salt and pepper to taste
