Asparagus - Fried 'Beer Batter

Mix Flour and seasoning together
- 1 to 2 lbs. Asparagus
- 1 cup flour
- 1 (12 oz.) can of beer
- Salt, pepper, garlic powder, seasoned salt and Italian seasoning to taste
- Olive oil
Paella 'Chicken & Seafood

- 4 1/2 cups low-sodium chicken broth
- 1/2 teaspoon crushed saffron (optional)
- 1 teaspoon smoked paprika or sweet paprika

- 4 skin-on, bone-in chicken thighs (about 1 pound total)
- coarse salt and ground pepper
- 6 ounces dried chorizo, sliced 1/4 inch thick
- 1/2 medium onion, diced small
- 3 garlic cloves, minced
- 2 large tomatoes, chopped
- 1 1/2 cups Arborio rice

- 1 pkg. Stove Top Stuffing Mix
- 1- 1/2 cup H2O
- 1/4 cup Butter or Margarine - cut into pieces (1/2 stick)
- 1 jar Chicken or Turkey Gravy (12 oz.)
- 2 cups Chopped cooked Chicken or Turkey
- 1 pkg. Frozen veggie mix (10 oz.)
- 1/4 tsp Dried Thyme Leaves (opt.)
- Sub 1 can condensed Cream of Chicken soup & 1 cup milk for gravy.
Hummus 'Roasted Red Pepepr

- 3 tablespoons juice from 1 to 2 lemons
- 6 tablespoons tahini , stirred well (see note)
- 2 tablespoons extra-virgin olive oil , plus extra for drizzling
- 1 (14-ounce) can chickpeas , drained and rinsed (see note)
- 1/4 cup jarred roasted red peppers , rinsed and dried thoroughly with paper towels
- 1 small garlic clove , minced or pressed through garlic press
- (about 1/2 teaspoon)
- 1/2 teaspoon table salt
- Pinch cayenne
- 2 tablespoons toasted sliced almonds
- 2 teaspoons chopped fresh parsley
Broccoli - PanRoasted 'Creamy Gruyere Sauce

**ATK:The florets are cut into small pieces so that they cook quickly and evenly
- For Broccoli
- 3 Tbs water
- 1/4 tsp table salt
- 1/8 tsp ground black pepper
- 2 Tbs vegetable oil
- 1 3/4 lbs broccoli , florets cut into 1 1/2-inch pieces, stems trimmed, peeled, and cut on bias into 1/4-inch-thick slices about 1 1/2 inches long (about 5 cups florets and 3/4 cup stems)
- For Sauce
- 1 Tbs unsalted butter
- 1 medium shallot , peeled and sliced into thin rings (about 2 tablespoons)
- 1/2 cup heavy cream
- 1/2 tsp Dijon mustard
- 1/2 tsp dry sherry
- pinch cayenne pepper
- 1/8 tsp table salt
- 3 Tbs very finely grated Gruyère (about 3/4 ounce), plus additional 1 to 2 tablespoons
- 1 tsp fresh lemon juice

1. Rub garlic, seasoning salt, pepper and cayenne pepper to taste onto roast
- 6 pounds Boston butt roast
- 4 cloves garlic, minced
- 2 teaspoons seasoning salt
- 2 teaspoons ground black pepper
- 1/8 tablespoon cayenne pepper
- 1 onion, chopped
- 3 cups barbecue sauce
Teriyaki Sauce 'Honolulu Style
