Casserole - Breakfast 'Chorizo & Tatters

1. Place the potato slices in a large pot filled with salted water
- 2 pounds Idaho potatoes, peeled, sliced 14-inch thick
- 1 pound mild chorizo sausage, casing discarded
- 1 cup chopped yellow onion
- 1 - 4 ounce can chopped mild green chilies, drained
- 1 1/2 teaspoons salt
- 3/4 teaspoon ground black pepper
- 3/4 cup prepared tomato salsa
- 4 oz. grated Cheddar cheese
- 10 large eggs
- 2 cups whole milk
- Prepared salsa to serve with casserole
- Warmed tortillas to serve with casserole
G'Meat - Sauted 'Sloppy Joes w' Tomato Soup

1.) Place ground beef in a large skillet over medium heat
- 2 lbs Ground Meat
- 1/2 cup chopped Onion
- 1 cup chopped Celery
- 1 (10.75 oz) can Tomato Soup
- 1/4 cup Ketchup
- 1 Tbsp. White Vinegar
- 1/4 cup packed Brown Sugar
- 1-1/2 tsp. Worcestershire sauce
- 1/2 tsp. Salt
- 1/4 tsp. garlic powder

1 Place beef in heavy pot; cover w/ H2O & add Garlic, Bay Leaf, Tomatoes, Cilantro, Salt & Pepper
- 8 lbs Top Sirloin or eye or round - well trimmed
- 2 cloves Garlic - chopped
- 1 Bay Leaf
- 1 can Tomatoes - (12 oz.)
- 1/4 cup Fresh Cilantro - chopped
- 1 bottle Italian Style Salad Dressing (8 oz.)
- 1 cup Cooked Garbanzo Beans
- 1/2 lb Monterey Jack - cut into 1/2" squares
- 1 cup Green Chilies - chopped (fresh or canned)
- 2 Avocados - strips
- 1 bunch Parsley

1. In a Dutch oven, brown the roast in oil
- 4 pounds boneless rump roast
- 2 tablespoons vegetable oil
- 2 teaspoons salt
- 1/2 teaspoon pepper
- 1/2 teaspoon dried thyme
- 1 bay leaf
- 3 cups water, divided
- 8 medium potatoes, peeled and quartered
- 8 large carrots
- 1 pound small onions, peeled
- 1/2 cup all-purpose flour
- 1/2 teaspoon browning sauce (optional)
- Additional salt and pepper to taste

- Ingredients
- 1 pound pork tenderloin , 1.5” thick
- 1 tablespoon unsalted butter or olive oil
- 1 cup unsalted chicken stock
- Salt & black pepper to taste
- Dry Rub
- 1 teaspoon dried oregano
- 1 teaspoon dried sage
- 1 teaspoon dried rosemary
- 3 garlic cloves , finely minced
- Thickener
- 2.5 tablespoons cornstarch

- 2 tablespoons olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- Coarse salt and ground pepper
- 1 1/2 teaspoons dried thyme or oregano
- 1 (28 ounce) can whole tomatoes
- 1 (28 ounce) can crushed tomatoes
- 2 pounds store-bought ravioli
- 1 1/2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese

- 6 slices bacon , halved lengthwise, then cut crosswise in 1/4-inch pieces
- 2 pounds Red Bliss potatoes (about 2 inches in diameter)

- 3 tablespoons unsalted butter , melted and warm
- 1/2 cup cream cheese (4 ounces) at room temperature
