1 Combine garlic, salt and pepper; press evenly onto beef steaks
- 4 boneless beef chuck top blade or chuck eye steaks, cut 3/4 inch thick (about 1-1/2 pounds)
- 2 to 4 cloves garlic, minced
- Salt and pepper
- 2 Tbs olive oil
- 1 package (6 ounces) fresh baby spinach (6 to 7 cups)
- 1/2 tsp dried rosemary leaves, crushed
- 1 cup shredded reduced fat parmesan cheese, divided

Quiche 'Green Chile & Zucchini

This quiche gets its Southwestern flair from Monterey jack cheese and canned chiles
- 4 tablespoons (1/2 stick) unsalted butter, melted
- 24 whole grain wheat crackers (Triscuits) ground in a food processor (about 1 cup) or 1 cup dried bread crumbs
- 1 medium zucchini (about 6 ounces)
- Kosher salt
- 1 tablespoon vegetable oil
- 1 small onion, chopped (about 1/2 cup)
- 1/4 cup unbleached all-purpose flour
- 1/2 teaspoon baking powder
- 3 large eggs
- 1/2 pound freshly grated Monterey jack cheese (about 2 cups)
- 1 cup whole-milk cottage cheese
- 1 (4.5-ounce) can chopped green chiles, drained
- Bottled salsa, optional
Quiche - Chicken Enchilada

1 Heat oven to 350 degrees F
- 1 Pillsbury(R) refrigerated pie crust, softened as directed on box
- 4 eggs
- 1 cup half-and-half or milk
- 1 1/2 cups canned chicken, drained
- 1 1/2 cups broken tortilla chips
- 2 cups shredded Monterey Jack cheese
- 1 cup shredded Cheddar cheese
- 1 cup Salsa
- 1 (4.5 ounce) can Old El Paso(R) Chopped Green Chiles
- 1/2 tsp salt
- Pepper, to taste (optional)
- Sour cream (optional)

- 1 cup (4 ounces) preshredded 4-cheese Mexican blend
- cheese, divided
- 1/3 cup fat-free milk
- 1/4 cup egg substitute
- 1 teaspoon ground cumin
- 1/8 teaspoon ground red pepper
- 1 (14 3/4-ounce) can cream-style corn
- 1 (8.5-ounce) box corn muffin mix (such as Martha White)
- 1 (4-ounce) can chopped green chiles, drained
- Cooking spray
- 1 (10-ounce) can red enchilada sauce (such as Old El Paso)
- 2 cups shredded cooked chicken breast
- 1/2 cup fat-free sour cream
