B'Steak - Sirloin [Gr] 'Korean BBQ'

In a small bowl, combine all ingredients except the steak
- steak (sirloin)
- 4 Tbs toasted sesame seeds
- 1/3 cup soy sauce
- 2 Tbs sesame oil
- 1/4 cup Brown Sugar Twin
- 1/4 cup chopped green onions
- 1/2 cup chopped onion
- 1 clove garlic, minced
- 1/4 tsp pepper
- 2 tsp minced ginger

- 2 tablespoons chili powder
- 2 tablespoons ground cumin
- 2 tablespoons dark brown sugar
- 2 tablespoons table salt
- 1 tablespoon ground oregano
- 1 tablespoon granulated sugar
- 1 tablespoon ground black pepper
- 1 tablespoon ground white pepper
- 2 teaspoons cayenne pepper
- Brisket
- 1 whole beef brisket (point and flat cut together), 9 to 11 pounds, fat trimmed to 1/4-inch thickness
- 3 cups barbecue sauce (store-bought if preferred)
- 2 cups wood chips

- 1 lb thinly sliced beef (sirloin or rib eye)
- 5 tbsp sugar
- 1/2 cup soy sauce
- 2 buds finely chopped garlic (can be crushed but remove buds before serving)
- 1/4 tsp salt
- 5 tbsp Mirin (sweet sake, optional)
- 2 tbsp sesame oil
- 2 tbsp toasted sesame seeds
- 1 cup split green onions
- 2 cups thinly sliced carrots (optional)

- 4 cups onions, chopped
- 2 lbs tomatillos, husks and stems removed and quartered
- 1 lb anaheim chili, cut into 1-inch pieces (about 4 medium)
- 6 garlic cloves, chopped
- 3 cups water
- 1 cup cilantro, chopped
- 1 teaspoon cumin
- 1/2 teaspoon oregano
