G'Beef [CP] 'Sour Cream Bake'

1.) Brown ground beef & drain
- 1 lbs ground Beef
- 1 can Pinto beans, drained (15 oz)
- 1 can Enchilada sauce (10 oz)
- 1 can Tomato sauce (8 oz)
- 1-1/2 cups American Cheese, processed & shredded
- 1 tbsp instand minced Onion
- 1 cup H2O
- 4 cups Corn chips
- 1 cup Sour Cream
Chicken - Whole [Bk] 'Parmesan 'Corn Flake

1 Preheat oven to 375 degrees F
- 1/3 cup flour
- 1 tsp salt
- 1 dash of pepper
- 1 (3 pound) broiler-fryer chicken, cut up
- 1 egg, lightly beaten
- 2 Tbs water 1/4 cup Grated Parmesan Cheese
- 1/2 cup crushed POST TOASTIES Corn Flakes
- 2 Tbs butter or margarine, melted

- 3 lbs bone-in, skin-on chicken breast halves , trimmed of
- excess fat and skin
- Table salt and ground black pepper
- 1 Tbs vegetable oil
- 3 medium jalapeño chiles
- 3 poblano chiles (medium), stemmed, seeded, and cut into
- large pieces
- 3 Anaheim chile peppers (medium), stemmed, seeded, and cut
- into large pieces
- 2 medium onions , cut into large pieces (2 cups)
- 6 medium cloves garlic , minced or pressed through garlic
- press (about 2 tablespoons)
- 1 Tbs ground cumin
- 1 1/2 tsp ground coriander
- 2 (14.5-ounce) cans cannellini beans , drained and rinsed
- 3 cups low-sodium chicken broth
- 3 Tbs fresh lime juice (from 2 to 3 limes)
- 1/4 cup minced fresh cilantro leaves
- 4 scallions , white and light green parts sliced thin
Fettuccine Alfredo

1 Cook Fettuccine as directed on package
- 4 oz Uncooked Fettuccine
- 1/4 cup Butter or Margarine
- 1/4 cup Evaporated Fat Free Milk or Whipping (heavy) Cream
- 2/5 cup Parmesan Cheese - grated
- 1/4 tsp Salt
- 1/16 tsp Pepper
- Fresh Parsley - chopped
Chowder - Corn 'Charred'

In a Lrg. soup pot, add Oil, Onions, Red Pepper, & Poblano Pepper
- 4 cups Charred Yellow Corn Kernels - diced small
- 2 Tbs Whole Wheat Flour
- 1 Red Bell Pepper - diced small
- 1 Poblano Chile - diced small
- 1 White Onion - diced small
- 2 White Potatoes - diced small
- 4 Green Onions - sliced
- Cracked Black Pepper to Taste
- 2 tsp Olive Oil
- 5 cups Chicken or Veggie stock
- 6 Cilantro sprigs - stemmed & chopped
Asparagus & Corn 'SourCream & BlueCheese Sauce

Cook corn and asparagus separately in unsalted water according to package directions
- 1 package (10 oz.) frozen corn
- 1 package (10 oz.) frozen asparagus spears
- 1 cup dairy sour cream
- 1/4 cup crumbled Blue cheese
- 1 tablespoon chopped onion
- 1 teaspoon white vinegar
- 1 teaspoon salt
- 1 tablespoon butter

1 Season chicken with salt and pepper and sauté in the olive oil until browned
- 3 or 4 boneless skinless chicken breasts
- salt and pepper
- 3 to 4 Tbs olive oil
- 5 cans (15 to 16 ounces each) great northern beans
- 2 cans (14.5 ounces each) chicken broth
- 1 can (4.5 ounces) chopped green chilies
- 1 can Rotel “Chili Fixin's”
- 1 packet of McCormick White Chicken Seasoning
- 1/2 tsp cumin
- 1/2 tsp chili powder

- 8 ounces dried rice stick noodles, about 1/8 inch wide
- 3/4 cup warm water
- 1/4 cup fish sauce
- 1/4 cup juice from 2 limes
- 1/4 cup packed dark brown sugar
- 1 tablespoon vegetable oil
- 1 rotisserie chicken, skin discarded, meat shredded into bite-sized pieces (about 3 cups)
- 4 garlic cloves, minced
- 1/4 cup bean sprouts
- 1/4 cup chopped fresh cilantro leaves

- Basic Turkey Stock
- 1 turkey carcass from 12- to 14-pound turkey, cut into 4 or 5 rough pieces to fit into pot
- 1 large onion , peeled and halved
- 1 large carrot , peeled and chopped coarse
- 1 large rib celery , about 4 ounces, chopped coarse
- 3 medium cloves garlic , unpeeled and smashed
- 2 cups dry white wine
- 1 bay leaf
- 5 sprigs fresh parsley leaves
- 3 sprigs fresh thyme
- Soup
- 2 pounds boiling potatoes , unpeeled and cut into 1-inch pieces
- 2 teaspoons minced fresh savory leaves
- 12 ounces linguiça sausage , cut into 1/4-inch-thick rounds
- 1 bunch kale (about 12 ounces), washed, stems removed, and leaves cut into 1/4-inch strips (about 9 cups, packed)
