Goulash - B'Shank

Place a large heavy pot over medium heat and add the bacon
- 4 slices bacon, chopped
- 3 pounds boneless beef shank, trimmed and cut into 2-inch cubes
- Kosher salt and freshly ground black pepper
- 3 tablespoons all-purpose flour
- 2 tablespoons olive oil
- 2 medium onions, chopped
- 3 garlic cloves, minced
- 2 roasted red bell peppers, peeled and sliced
- 3 tablespoons Hungarian sweet paprika
- 2 teaspoons caraway seeds, toasted and ground
- 2 tablespoons
- red wine vinegar
- 1 (15-ounce) can whole peeled tomatoes, hand crushed
- 6 cups low-sodium beef broth
- 4 russet potatoes, peeled and thickly sliced
- 1/2 cup sour cream
- Chopped flat-leaf parsley, for garnish
Pork - Loin [Sk] 'Tonkatsu'

1 Put Salt & Pepper in the Pork 2 Lightly coat the pork with flour and pat them dry
- 4 slices Pork Loin or Fillet
- 1 Egg
- 1 cup Panko (Bread Crumbs)
- 1/4 cup Flour
- Vegetable oil for Frying

Chicken - Cutlets [Bk] 'Chinese

Cook chicken in advanced & vacuum seal
- 2 Tbsp. plain dry breadcrumbs
- 3 Tbsp. Sesame seeds, toated if desired
- 1/2 tsp. Salt
- 1/4 tsp. ground ginger

- 3 ounces bacon (about 3 slices), cut into 1/4-inch pieces
- 2 tablespoons unbleached all-purpose flour
- 1 3/4 cups apple cider
- vegetable oil
- 4 bone-in, rib-end pork chops 1/2 to 3/4 inch thick
- ground black pepper
- 1 medium yellow onion , halved pole-to-pole and sliced thin (about 1 3/4 cups)
- 1 Granny Smith apple (large), or 2 small Granny Smith apples, peeled, cored, and cut into 3/8-inch wedges

- 2 tablespoons water
- 2 medium cloves garlic , pressed through garlic press or minced (about 2 teaspoons)
- 1 teaspoon minced fresh thyme leaves
- 2 bay leaves
- 1 tablespoon minced fresh parsley leaves
