In an 8-in. ovenproof skillet over medium heat, saute onion and zucchini in oil for 2-3 minutes
- 1/2 cup chopped onion
- 1 cup shredded zucchini
- 1 tsp cooking oil 3 eggs, beaten
- 1/4 tsp salt
- 1 cup shredded Swiss cheese

- 2/3 cup Slow-Cooked Garlic Mojo (stir before measuring)
- 1 pound medium shrimp, peeled and (if you wish) deveined
- Salt
- 1 to 3 canned chipotle chiles en adobo, seeded and finely chopped
- 1 pound dried linguine
- 2 or 3 tablespoons coarsely chopped watercress, parsley or cilantro
- 3/4 cup grated Mexican queso anejo, Parmesan or Romano

- 1 Vaccum'd Sealed Sliced Sesame Chicken Culets
- 3 tbsp seasoned rice vinegar or white wine vinegar
- 1 tbsp Soy Sauce
- 1 tbsp Honey (only if using white wine vinegar)
- 2 tsp Sesame Oil
- 8 cups coarsely shredded iceberg lettuce (1 Med. head)
- 1/2 cup cilantro; chopped
- 1/3 cup Roasted Peanuts; chopped
- 1/4 cup Green Onions; slices
- 1/4 cup Ginger; crystallized & chopped

- 5 lbs Med. Sized Yellow Squash
- 2 Eggs - beaten
- 1 cup Bread Crumbs + additional for topping
- 1 stick Butter
- 1/4 cup Sugar
- 2 Tbs Onion - chopped
- 1 dash Black Pepper

1. Cut each zucchini crosswise into several pieces, each 2 to 3 inches long
- 5 medium zucchini (about 8 ounces each), ends trimmed
- Table salt
- 1 tablespoon extra-virgin olive oil , plus 2 teaspoons, plus extra for serving, if desired
- 1 cup grated carrots
- 1/2 teaspoon coriander
- 1/4 teaspoon red pepper flakes
- 1/2 cup golden raisins
- 1/2 cup toasted and sliced almonds
- 1 - 2 teaspoons fresh lemon juice from 1 lemon
- Ground black pepper
Taters 'Air Roasted

- 5 cloves Garlic (mined)
- 1/2 tsp Oregano (dried)
- 2 Tbsp Parsley leaves
- 3 lbs small Taters
- 1 tsp thyme (dried)
- Kosher Salt & ground Pepper to taste
- 2 Tbsp Olive Oil
- 2 Tbsp Butter (unsalted & melted)
- 1/3 cup Parmesan cheese (grated)
