- 3 tablespoons unsalted butter, melted
- 1/2 About 1/2 cup Mexican crema or sour cream mixed with a little milk or cream
- 1/3 cup crumbled Mexican queso anejo or queso fresco, or cheese like parmesan, feta or farmer’s cheese
- 1 About 1 tablespoon hot powdered chile
Stuffin - Couscous 'Fennel, Dried Apricots & Cashews

**ATK:For best flavor and texture, stir the scallion, parsley, and cashews into the stuffing just before serving
- 2 Tbs unsalted butter
- 1/2 medium bulb fennel , chopped fine (about 1 cup)
- 1 medium clove garlic , minced or pressed through garlic press (about 1 teaspoon)
- 1/3 cup finely chopped dried apricots
- 1/8 tsp ground cinnamon
- 1/4 tsp ground cumin
- 1/2 tsp table salt
- 1/4 tsp ground black pepper
- 2 cups low-sodium chicken broth
- 10 oz plain couscous (1 box or 1 1/2 cups plus 2 tablespoons)
- 1 medium scallion , sliced thin
- 1/4 cup chopped fresh parsley leaves
- 1/4 cup chopped unsalted raw cashews , toasted

- 1.5 lbs Potatoes (4 Med.)
- 2/3 Cup Diced Peppers (red/green/yellow)
- 2 Green Onions, thinly sliced
- 2 Tbsp Butter
- 3 Tbsp All-Purpose Flour
- 1.5 Cup Milk
- 1 tsp ground Cummin
- 1.5 Cups grated Monterery Jack Cheese
- 1/4 cup well-drained salsa sauce
- 1/4 tsp Salt
B'Steak - Sirloin [Sk] 'Asparagus & Peppers

1.) Combine 1st 6 ingredients in a small bowl, stirring well with a whisk
- 1/4 cup unsalted Chicken Stock
- 1-1/2 Tbsp Oyster sauce
- 1-1/2 Tbsp Soy Sauce
- 2 tsp. Ginger (peeled & grated)
- 2 tsp. Garlic (minced)
- 1 Tbsp CornStartch
- 5 tsp. Canola Oil (divided)
- 12 oz. Sirloin Steak (cut into 1/4" strips)
- 12 oz. Asparagus (trimmed & cut into 2" pieces)
- 1 Red Bell Pepper (Red & cut into strips)
- 1/2 tsp. Red Pepper Flakes (crushed)
- 3 Green Onions (chopped)

- 9 uncooked lasagna noodles
- 1 onion, chopped
- 4 cloves garlic, chopped
- 1 (14.5 ounce) can vegetable broth
- 1 tablespoon chopped fresh rosemary
- 1 (14 ounce) can marinated artichoke
- hearts, drained and chopped
- 1 (10 ounce) package frozen chopped
- spinach, thawed, drained and squeezed dry
- 1 (28 ounce) jar tomato pasta sauce
- 3 cups shredded mozzarella cheese, divided
- 1 (4 ounce) package herb and garlic feta,

- 1- 1/2 cups Beef Broth
- 3/4 cup Uncooked Orzo or Rosamarina Pasta (4-1/2 oz.)
- 1/2 can Niblets vacuum-packed whole kernel corn - undrained
- 1/2 can Old El Paso chopped Green Chilis - undrained (4.5 oz.)
- 1 tsp Olive or Veggie Oil
- 1/4 lb Beef - cut for stir-fry
- 1/2 med. Bell Pepper - cut into 1/4" strips
- 1/8 cup Fresh Cilantro - chopped Fresh Cilantro - chopped

- 1 1/2 cups raisins
- 4 3/4 cups all-purpose flour
- 4 cups white sugar
- 1 1/2 tsp baking powder
- 1 1/2 tsp baking soda
- 1 1/2 tsp salt
- 1 1/2 tsp nutmeg
- 1 1/2 tsp cinnamon
- 1 1/2 tsp ground cloves

If you can't find chuck and/or sirloin, substitute any 85 percent lean ground beef

- 3 oz Monterey Jack cheese , grated on small holes of box grater (about 1 cup)
- 1 Tbs unsalted butter
- 1 medium onion , chopped fine (about 1 cup)
- 1 medium rib celery , chopped fine (about 1/2 cup)
- 1 medium clove garlic , minced or pressed through a garlic press (about 1 teaspoon)
- 2 tsp minced fresh thyme leaves
- 1 tsp paprika
- 1/4 cup tomato juice
- 1/2 cup low-sodium chicken broth
- 2 large eggs
- 1/2 tsp unflavored gelatin (powdered)
- 1 Tbs soy sauce
- 1 tsp Dijon mustard
- 2/3 cup crushed saltine crackers
- 2 Tbs minced fresh parsley leaves
- 3/4 tsp table salt
- 1/2 tsp ground black pepper
- 1 lb ground sirloin
- 1 lb ground beef chuck
- Glaze
- 1/2 cup ketchup
- 1 tsp hot pepper sauce
- 1/2 tsp ground coriander
- 1/4 cup cider vinegar
- 3 Tbs packed light brown sugar

- 1 can (10 3/4 oz.) cream of chicken soup
- 8 oz. Cheddar cheese, shredded
