Chowder - Clam 'Mannhattan' (Fresh)

1. Chop clams, reserving juice; set clams aside
- 1 pint shucked clams
- 1 cup tomato and clam juice cocktail
- 2 potatoes, cleaned and chopped
- 1 cup chopped green bell pepper
- 1/4 cup chopped green onions
- 1/4 teaspoon ground black pepper
- 1 (14.5 ounce) can Italian-style diced tomatoes

1. Preheat oven to 350 degrees F
- 2 cups chicken broth
- 1 cup dried cranberries
- 1/4 cup butter
- 1 onion, chopped
- 1 red bell pepper, chopped
- 1 cup chopped celery
- 2 Granny Smith apples, cored and finely chopped
- 3 large eggs
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1 (10.75-ounce) can cream of celery soup

- 4 slices bacon, diced
- 1 1/2 cups chopped onion
- 1 1/2 cups water
- 4 cups peeled and cubed potatoes
- 1 1/2 teaspoons salt
- ground black pepper to taste
- 3 cups half-and-half
- 3 tablespoons butter
- 2 (10 ounce) cans minced clams

Buy St. Louis-style racks, which are more manageable than untrimmed pork ribs
- 3 Tbs paprika
- 2 Tbs light brown sugar

- 1 teaspoon celery seed ground black pepper to taste

- 1/2 yellow squash, diced
- 1/2 red bell pepper, diced
- 1 Tbsp crumbled feta cheese
