Casserole - Tuna 'Noodle from Scratch'

Preheat oven to 375 degrees F (190 degrees C)
- 1/2 cup butter, divided
- 1 (8 ounce) package uncooked medium egg noodles
- 1/2 medium onion, finely chopped
- 1 stalk celery, finely chopped
- 1 clove garlic, minced
- 8 ounces button mushrooms, sliced
- 1/4 cup all-purpose flour
- 2 cups milk
- salt and pepper to taste
- 2 (6 ounce) cans tuna, drained and flaked
- 1 cup frozen peas, thawed
- 3 tablespoons bread crumbs
- 2 tablespoons butter, melted
- 1 cup shredded Cheddar cheese
Marinade - Chicken 'Chili : Wet/Dry'

- boneless skinless chicken breasts
- 2 Tbs olive oil
- 2 Tbs lime juice
- 2 tsp chili powder
- 1/2 tsp cumin
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1 dash cayenne pepper

Pour 3 to 4 inches of oil into a deep fryer or large pot and preheat the oil to 350 degrees
- oil for frying
- 4 boneless, skinless chicken breasts
- 2 cups all-purpose flour
- 2 teaspoons salt
- 2 teaspoons ground black pepper
- 1 cup buttermilk
- 1/2 cup water
Shrimp 'Garlicky Bread Crumbs

Vermouth can be substituted for the sherry
- 3 inch piece baguette , cut into small pieces
- 5 tablespoons unsalted butter , cut into 5 pieces
- 1 small shallot , minced (about 2 tablespoons)
- Table salt and ground black pepper
- 2 tablespoons minced fresh parsley leaves
- 2 pounds extra-large shrimp (21-25), peeled and deveined
- 1/4 teaspoon sugar
- 4 teaspoons vegetable oil
- 4 medium cloves garlic , minced or pressed through a garlic press (about 4 teaspoons)
- 1/8 teaspoon red pepper flakes
- 2 teaspoons unbleached all-purpose flour
- 1/3 cup dry sherry
- 2/3 cup clam juice (bottled)
- 2 teaspoons fresh lemon juice
- 1 lemon , cut into wedges
Chowder - Smoked Salmon 'Chef @ Home

Toss the chopped bacon into a thick-bottomed stockpot with a splash of water
- 4 slices bacon, chopped
- splash of water
- 1 large onion, peeled and chopped
- 2 stalks celery, chopped
- 1 cup any white wine
- 2 cups half & half cream (18%) (Canned milk/3.25%)
- 2 cups clam juice (fish broth)
- 1 large baking potato (unpeeled), coarsely grated
- 2 bay leaves
- 1 pound hot or cold smoked salmon
- 2 tablespoons horseradish
- A sprinkle of salt and lots of freshly ground pepper
Asparagus - Creamed 'Ham & Eggs

Melt the butter in a heavy-bottomed saucepan
- 4 tablespoons butter
- 4 tablespoons flour
- 1 1/2 - 2 cups milk
- 1/2 teaspoon prepared mustard
- a s quirt of hot sauce
- 1 teaspoon s alt
- 1/4 teaspoon black pepper
- 1/2 cup freshly grated Parmesan cheese
- 1 1/2 - 2 cups Monterey Jack or cheddar cheese
- 1/2 - 1 cup chopped ham, optional
- 1 pound of asparagus , washed and tough ends removed
- 6-8 hard boiled eggs
- buttered toast as needed

- 1 (15 ounce) can Black Beans, drained, rinsed
- 1 (19 ounce) can Red Enchilada Sauce
- 1 cup Frozen Shoepeg White Corn, thawed
- 1 cup Salsa
- 2 Tbs thinly sliced green onions
