Manicotti '3 Cheese

Can be Covered & Chilled for up to 24 hrs before baking
- 1/4 cup Chopp’d Onion
- 1 Clove Minced Garlic
- 1 Tbs Cooking Oil
- 1 Can Tomatoes Cut Up (14.5 oz)
- 1 Can Tomato Sauce (8 oz)
- 1 tsp Sugar
- 1 tsp Crushed Dried Oregano
- 1/4 tsp Crushed Dried Thyme
- 2 Beat’n eggs
- 2 cups Mozzarella Cheese
- 1 sm. Bay Leaf
- 1/2 cup Grat’d Parmesan Cheese
- 1/2 cup Snipped Fresh Parsley
- 1/2 tsp Crushed Dried Oregano
- 1- 1/2 cup Ricotta Cheese or creamy Cottage Chse.
- 8 Dried Manicotti Shells
Pasta 'Butternut Squash & Sage

Don’t be tempted to use dried sage in this recipe
- 4 slices bacon , halved lengthwise, then cut crosswise into 1/4-inch pieces
- 8 large fresh sage leaves , plus 1 tablespoon minced (see note)
- 1 medium medium butternut squash (about 2 pounds), peeled, seeded, and cut into 1/2-inch dice
- 1 tablespoon unsalted butter
- 6 scallions , sliced thin (about 1 cup)
- 1/4 teaspoon freshly grated nutmeg
- 1 teaspoon sugar
- Table salt and ground black pepper
- 2 cups low-sodium chicken broth

- 1 lb. asparagus, tough ends removed, and cut into 2″ pieces
- 1 lb. large shrimp, peeled and deveined
- 1 (16 oz.) package vacuum-packed gnocchi
- 1/4 cup pesto, homemade or store-bought
