Beef - Strips [SF] 'Broccoli

1.) Carefully slice Beef into thin bite size pieces, across the grain of beef
- 1 cup Beef - sliced thin
- 2 Tbs Soy Sauce
- 1 Tbs Wine
- 1/2 lbs Broccoli - shred3 in 3" lengths.
- 2 Tbs Sugar
- 3 Tbs Oil
- 1/2 cup H2O
- Salt
Manicotti [Bk] 'Sausage

We prefer Barilla no-boil lasagna noodles for their delicate texture resembling fresh pasta
- Tomato Sauce
- 2 28-ounce cans diced tomatoes (in juice)
- 2 Tbs extra-virgin olive oil
- 1 lb Italian sausage , hot or sweet, casings removed
- 3 medium cloves garlic , minced or pressed through garlic press (about 1 tablespoon)
- 1/2 tsp hot red pepper flakes , optional
- Table salt
- 2 Tbs chopped fresh basil
- Cheese Filling and Pasta
- 3 cups part-skim ricotta cheese
- 4 oz grated Parmesan cheese (about 2 cups)
- 8 oz shredded mozzarella cheese (about 2 cups)
- 2 large eggs , lightly beaten
- 3/4 tsp table salt
- 1/2 tsp ground black pepper
- 2 Tbs chopped fresh parsley leaves
- 2 Tbs chopped fresh basil
- 16 no-boil lasagna noodles (see note above)
Rice - Fried 'Bennies Style'

1 Cook Rice per package. Pour Rice into Lrg
- 4 cups Cooked Converted or Parboiled Rice
- 1 cup Frozen Peas - thawed
- 1 Tbs Carrot - finely grated
- 1/2 cup Onions - diced
- 2 Eggs - beaten
- 1- 1/2 Tbs Butter
- 2 Tbs Soy Sauce
Beans - Green 'Almondine

Cook slivered Almonds in Butter over Low heat until golden, stirring occasionally
- 1/4 cup slivered blanched Almonds
- 1/4 cup Butter
- 1/4 tsp Salt
- 1-2 tsp Lemon Juice
- 2 cups cooked Green Beans
Chorizo - P'Grnd 'Green Chiles

1. Prepare the flavorings
- 1 large fresh poblano chile
- 1 or 2 fresh serrano chiles, stemmed and roughly chopped
- 1 medium bunch of cilantro, tough lower stems cut off, the leafy part roughly chopped
- 1 1/2 pounds ground pork (you’ll need pork that’s a little fatty - 25 to 30% - and preferably
- coarsely ground)
- 2 teaspoons salt

1 MAKE THE RUB: Place the iced tea mix, sugar, mint, paprika, salt, and pepper in a bowl
- FOR THE RUB:
- 2 tsp iced tea mix (made with sugar, not artificial sweetener)
- 2 tsp granulated sugar
- 2 tsp dried mint (peppermint or spearmint)
- 2 tsp sweet paprika 2 tsp coarse salt (kosher or sea)
- FOR THE MINT GLAZE
- 3 Tbs mint jelly
- 3 Tbs fresh lemon juice
- 3 Tbs butter
- 1/4 cup bourbon
- 2 Tbs sugar
- 2 racks baby back ribs (4 to 5 pounds total)
- Bourbon Barbecue Sauce (see below) You'll also need:
- 2 cups hickory chips, soaked in water to cover for 1 hour, then drained (optional-only if using a charcoal grill)

Fajitas - C'Breast [Gr] 'ATK - Charcoal'

ATK: The chicken and vegetables in these fajitas are only mildly spicy
- 1/3 cup lime juice , from 2 to 3 limes
- 6 Tbs vegetable oil
- 3 medium cloves garlic , minced or pressed through garlic press (about 1 tablespoon)
- 1 Tbs Worcestershire sauce
- 1 1/2 tsp brown sugar
- 1 jalapeño chile , seeds and ribs removed, chile minced
- 1 1/2 Tbs minced fresh cilantro leaves
- Table salt and ground black pepper
- 3 boneless, skinless chicken breasts (about 1 1/2 pounds), trimmed of fat, tenderloins removed, breasts pounded to 1/2-inch thickness
- 1 large red onion (about 14 ounces), peeled and cut into 1/2-inch-thick rounds (do not separate rings)
- 1 large red bell pepper (about 10 ounces), quartered, stemmed, and seeded
- 1 large green bell pepper (about 10 ounces), quartered, stemmed, and seeded
- 8 - 12 plain flour tortillas (6-inch)
