Peppers - Stuffed 'Grnd B & Corn

1 In a large kettle over medium-high heat, cook peppers in boiling salted water for 3-5 minutes
- 6 medium green bell peppers, tops removed, seeded
- 1 lb ground beef
- 1/4 cup chopped onion
- 1 (11 ounce) can whole kernel corn, drained
- 1 (8 ounce) can tomato sauce
- 1 cup cooked rice
- 1/4 cup steak sauce
- 1/4 tsp salt
- 1/4 tsp pepper
Hummus 'Smoked Paprika

- 3 tablespoons juice from 1 to 2 lemons
- 1/4 cup water
- 6 tablespoons tahini , stirred well (see note)
- 2 tablespoons extra-virgin olive oil , plus extra for drizzling
- 1 (14-ounce) can chickpeas , drained and rinsed (see note)
- 1 small garlic clove , minced or pressed through garlic press
- (about 1/2 teaspoon)
- 1/2 teaspoon table salt
- 1 teaspoon smoked paprika
- Pinch cayenne
- 1 tablespoon thinly sliced scallion greens
- 2 tablespoons toasted pine nuts
Chicken - Breast [SF] 'Garlic, Peas & Cabbage

1.) Heat Peanut oil in wok or Lrg
- 2 Tbs Peanut Oil
- 6 Cloves Minced Garlic
- 1 tsp Grat’d Fresh Ginger
- 2 Tbs Soy Sauce
- 1 lbs Chicken Strips
- 1 cup Chicken Broth
- 2 Tbs White Sugar
- 2 ea. Thinly Slic’d Sweet Onions
- 1 Bunch Chopp’d Green. Onions
- 1 ea. Red Pepper - Sliced
- 2 cups Sugar Snap Peas
- 2 Tbs CornStarch
- 1 cup Sliced Cabbage
ColeSlaw [BCCr] 'Mayo

Place the cole slaw mix in a large bowl
- 1 lb packaged cole slaw mix (shredded red and green cabbage and carrots)
- 1-1/2 cups mayonnaise
- 3 Tbsp apple cider vinegar
- A pinch of sugar or 1 Tbsp honey or agave nectar
- 1 tsp celery seed
- Kosher salt and fresh black pepper, to taste
- 1/4 cup mild blue cheese, crumbled, or more to taste

- In a 13x9" baking pan, make a single layer of the following: Potatoes, Onions, 6 Tbsp Margarine, Sour Cream, Chee...
- 1 pkg. Thawed Frozen Hash Browns (2 lbs)
- 1 med. Onion - finely chopped
- 6 Tbs Margarine - melted
- 1 lbs Sour Cream
- 8 oz. Cheddar or Colby Cheese - shredd
- 1 can Cream of Chicken soup
- Cornflakes - crushed
- 5 Tbs Margarine - melted
- Salt & Pepper to taste
Salad - Pasta 'Pepperoni, Mozzeralla & Broccoli

- 1 lbs Rigatoni Pasta
- 1/4 cup Lemon Juice
- 1 tsp Salt
- 12 oz Pepperoni
- 2/3 cups Veggie Oil
- 2 Tbs Red Wine Vinegar
- 1 tsp Dried Oregano
- 1/2 cup Carrot - chopped
- 6 oz Mozzarella cheese - cut into 1/4" pieces
- 1 med. Green Pepper - cut into 1/4" pieces
- 1/2 cup Red Onion - chopped into 1/4" pieces
- 1/4 tsp Black Pepper - ground
- 3 cup Broccoli Flowerets - steamed 3 min.

- 1 cup All Purpose Flour

- 1/2 cup rice vinegar , plus an additional 2 teaspoons
- 1/3 cup light brown sugar
- 3 Tbs orange juice
- 2 Tbs Dijon mustard
- 3 Tbs mirin
- 1 Tbs soy sauce
- 1 tsp finely grated fresh ginger

- 4 boneless, center-cut pork loin chops , 5 to 7 ounces each, 1/2 to 3/4 inch thick

- 2 cups cabbage (shredded)
- 1 carrot (shredded)
- 1/4 cup Mayo
- 1/4 cup Sour Cream
- 2 Tbsp grainy Mustard
- 1 Lemon (juiced)
- salt & pepper to taste
- 1/4 cup Blue Cheese (crumbled)
- 1 handful parsley (chopped)
