B'Steak - Cubed [Sk] 'Chicken Fried

Be sure oil is hot before placing the steaks in the frying pan
- 4 beef cubed steaks
- 1 cup flour
- 1 tsp. salt
- 1 tsp. pepper
- 1 cup buttermilk
- 1 egg
- 1 tsp. chicken bouillon, powdered
- 2 tsp. dry mustard
- vegetable oil for frying
- 4 Tbsp. flour
- 2-1/2 cups milk
B'Roast - ChuckEye/Rlld XRib/PrimeRib [Bk] 'Garlic Crust

Wipe roast. Place on roasting rack
- 3 lbs. chuck eye, rolled cross rib, or prime rib roast
- 2 tbsp. olive oil
- 3 cloves garlic, peeled and crushed
- 1 c. bread crumbs
- 1/4 c. chopped fresh parsley
- 1/2 tsp. salt
- 1/2 tsp. black pepper

In a mixing bowl, combine eggs and sugar
- 3 eggs, lightly beaten
- 2 cups sugar
- 1 cup canned pumpkin
- 1 cup butter or margarine, melted
- 1 Tbs vanilla extract
- 3 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp ground cloves
- 1 cup shredded zucchini
- 1 cup chopped walnuts
Peach - Crumble

Add the lemon juice to taste in step 2 according to the sweetness of your peaches
- Filling
- 3 1/2 pounds ripe but firm peaches (6 to 7 medium), peeled and pitted; each peach halved and cut into 3/4-inch wedges (about 6 1/2 cups prepared peaches)
- 1/3 cup granulated sugar (2 1/3 ounces)
- 1 1/4 teaspoons cornstarch
- 3-5 teaspoons fresh lemon juice from 1 lemon (see note above)
- Pinch table salt
- Pinch ground cinnamon
- Pinch ground nutmeg
- Topping
- 1 cup unbleached all-purpose flour (5 ounces)
- 1/4 cup granulated sugar (1 3/4 ounces) plus 1 tablespoon
- 1/4 cup packed brown sugar (light or dark), 1 3/4 ounces
- 1/8 teaspoon table salt
- 2 teaspoons vanilla extract
- 6 tablespoons unsalted butter , cut into 6 pieces and very soft
- 1/2 cup sliced almonds

Cooking Tips: w/ South Carolina Mustard Barbecue Sauce
- For the rub and Boston butt:
- 2 tsp dry mustard
- 2 tsp sweet paprika
- 2 tsp salt
- 1 tsp freshly ground black pepper
- 1 tsp ground white pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 to 1 tsp cayenne pepper
- 1 Boston butt (bone-in pork shoulder roast), 5 to 7 pounds
- For the mop sauce:
- 2 cups distilled white vinegar
- 1/2 cup Dijon-style mustard
- 1/2 cup water
- 1 Tbs salt
- 2 tsp freshly ground black pepper
- You’ll also need:
- 4 to 6 cups hardwood chips (preferably hickory), soaked in water to
- cover for 1 hour, then drained

- 1 chuck-eye roast (about 3 1/2 pounds), boneless
- Table salt and ground black pepper
- 2 tablespoon vegetable oil
- 1 medium onion , chopped medium
- 1 small carrot , chopped medium
- 1 small rib celery , chopped medium
- 2 medium cloves garlic , minced
- 2 teaspoons granulated sugar
- 1 cup low-sodium chicken broth
- 1 cup low-sodium beef broth
- 1 sprig fresh thyme
- 1 1/2 cups water
- 1/4 cup dry red wine

Lightly mix together the blue cheese, lemon juice, mayonnaise, and salt and pepper in a large salad bowl
- 1 cup crumbled blue cheese
- 2 lemons, juiced
- 1/3 cup mayonnaise

- 4 green onions with tops, thinly sliced

1 Chop Broccoli into 1-1/2" pieces
- DRESSING:
- 1- 1/2 lbs Broccoli
- 1/4 cup Soy Sauce
- 2 Tbs Sesame Oil
- 1 Tbs Sugar
- 1- 1/2 Tbs Vegetable Oil
- 1 Tbs Lemon Juice
- 1/2 tsp Crushed Red Pepper
- 1- 1/2 Tbs Garlic - minced
Apple - Crisp 'Old Fashioned

Preheat the oven to 350 deg
- 5 lbs McIntosh or Macoun Apples
- Grated zest of 1 Orange
- Grated zest of 1 Lemon
- 2 Tbls freshly squeezed O.J.
- 2 Tbls freshly squeezed Lemon Juice
- 1/2 c. granulated sugar
- 2 tsp. ground cinnamon
- 1 tsp. ground nutmeg
- 1-1/2 cup flour
- 3/4 c. granulated sugar
- 3/4 c. light brown sugar, packed
- 1/2 tsp. kosher salt
- 1 c. oatmeal
- 1/2 lbs cold unsalted butter, diced

Boil Potatoes 1. Peal, and cube potatoes into bite size pieces
- 4 to 5 Large Taters - diced
- 1 Tbsp Ginger - grated
- 1 Tbsp Garlic - minced

- 2 Tbsp Lemon Juice

- 1/2 Cup Cilantro leaves - chopped

- 5 Curry leaves - optional
- 1/2 tsp Chili powers / Cayenne - up to 1 tsp
- 1 Tbsp Coriander powder
