- 4 cups sifted confectioners' sugar (approximately 1 lb.)
- 3-4 tablespoons milk
- Opt: for thinner icing use corn syrup or additional milk or water

- 1/4 teaspoon instant or rapid-rise yeast
- 1 1/2 teaspoons table salt
- 3/4 cup plus 2 tablespoons water (7 ounces), at room temperature
- 1/4 cup plus 2 tablespoons mild-flavored lager (3 ounces)
- 1 tablespoon white vinegar

- 1-7 oz box Odense Almond Paste, grated
- 1/2 cup sugar
- 1 1/2 sticks (12 tablespoons) unsalted butter, softened
- 3 eggs, room temperature
- opt: 1/8 tsp almond extract
- 1 cup all-purpose flour
- 1/4 teaspoon salt
- Food coloring, green, yellow and red
- 2/3 cup seedless raspberry jam
- 1/2 cup semi-sweet chocolate chips
- 1 teaspoon vegetable shortening
