- 113 g (1 stick) butter*, cut into pats or 1/2-inch cubes
- 128 g King Arthur Unbleached All-Purpose Flour
- 57 g water
- If you're using unsalted butter, add 1/4 teaspoon salt.
- Second Layer
- 227 g water
- 113 g (1 stick) butter*
- 128 g King Arthur Unbleached All-Purpose Flour
- 3 large eggs, at room temperature; warm them, in the shell, in hot tap water for 10 minutes if they're cold from the fridge
- 1 teaspoon almond extract
- If you're using unsalted butter, add 1/4 teaspoon salt.
- Topping
- 198 g jam or preserves
- 57 to 71 g slivered or sliced almonds, toasted in a 350°F oven for about 7 to 10 minutes, or until they're a light, golden brown
- Icing
- 57 g confectioners' or glazing sugar
- 1 teaspoon vanilla
- 4 teaspoons milk or water (approximately)

Tried the Anne Burrell - was not curdling so added more vinegar -used twice as much vinegar, let it cook for much

- In a medium saucepan, combine the milk, heavy cream, vinegar and salt. Place the pan over a medium heat and slowly bring the milk mixture to a simmer. Simmer the milk mixture for 1 to 2 minutes, you will see curds begin to form.
- Preheat the grill or broiler.
- While the ricotta is draining, slice the bread into 1/2-inch thick slices. Toast the bread on the grill or in the broiler on both sides. Swipe the garlic 2 times on each piece of toast and drizzle each toast with big fat finishing oil.
- Serve the ricotta and grilled bread. The ricotta is best served a little warm.

- 1/4 cup juice plus 1 teaspoon finely grated zest from 2 oranges
