Baked homemade pecan brownie topped with mini marshmallows and chocolate icing
- Icing:
- 3 large eggs
- 1/2 cup (1 stick) butter, melted
- 1/2 cup oil
- 2 cups sugar
- 1/2 cup unsweetened cocoa
- 1 teaspoon vanilla extract
- 1/8 teaspoon salt
- 1 1/2 cups all-purpose flour
- 1 1/2 cups pecans, coarsely chopped
- 3/4 of a 10.5 oz. bag miniature marshmallows
- 1 (16 oz) package powdered sugar
- 1/2 cup (1 stick) butter, softened
- 1/2 cup cocoa
- 1 teaspoon vanilla
- 1/3 cup boiling water (I microwave it)

- 8 to 10 chicken thighs
- 1 (12 to 16-ounce) package andouille sausage, sliced
- 1 cup vegetable oil
- 1 cup all-purpose flour
- 1 large onion, chopped, about 1 1/4 cups
- 1 medium green bell pepper, chopped
- 2 ribs celery, chopped, about 1/3 cup
- 3 medium garlic cloves, minced
- 2 teaspoons salt or to taste
- 1/4 teaspoon cayenne pepper, or to taste
- 1/4 teaspoon black pepper
- 1/4 to 1/2 teaspoon BeaZell's Cajun seasoning
- 1/2 cup green onions, chopped
- 1/2 cup fresh parsley, chopped

- 1 small (3.4 oz) package instant vanilla pudding mix
- 1 (20 oz) can crushed pineapple in juice, undrained
- 1 teaspoon imitation rum extract (I used McCormick's)
- 1 (8 oz) tub Cool Whip, thawed
- 2 1/2 cups miniature marshmallows
- 1 cup sweetened flaked coconut
- 1/4 cup finely chopped pecans or walnuts (I used pecans)
1-Pan Chicken and Veggies

Great weeknight meal, just throw everything in the pan and bake!
- 3 large boneless skinless chicken breasts, cut in half
- 2 pounds small to medium red potatoes, quartered or small chunks
- 3 (14.5 oz) cans cut green beans, rinsed and drained well (or about 1 lb. fresh beans)
- 1/2 stick (4 tablespoons) butter, melted
- 1 (1 oz) packet Ranch (or Italian) dressing mix (I used Hidden Valley Original Ranch Dressing and Seasoning Mix)
- Salt and black pepper, to taste (optional)
Imitation Crab Pasta Salad

Cook pasta as directed on package
- 1 pound imitation crab meat, coarsely chopped (I like Louis Kemp brand)
- 1 cup elbow macaroni (or other small pasta), uncooked
- 1 medium bell pepper, chopped
- 1/4 cup celery (about 1 rib), chopped (optional)
- 1/4 teaspoon onion salt
- 1/4 teaspoon creole seasoning, or to taste (such as Tony Chachere's)
- good pinch of garlic salt, or to taste
- 1/4 teaspoon ground black pepper, or white pepper
- 2 - 3 tablespoons mayo, as needed
- 1 medium, ripe but firm, tomato, seeded and diced (optional but recommended)

- GLAZE:
- 1 cup self-rising flour
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon ground cinnamon
- 2 tablespoons vegetable shortening (I used Crisco)
- 2 tablespoons unsalted butter
- 2/3 cup whole milk
- 1/2 cup chopped fresh pineapple, drained on paper towels
- 2 tablespoons unsalted butter
- 3 tablespoons light brown sugar, packed
- Dash of salt, optional

- 1/2 cup vegetable oil
- 1 (20-ounce) can crushed pineapple in juice, DIVIDED (half of it will be used in the frosting)
- 4 tablespoons fresh lemon juice, divided
- 2 tablespoons water
- FROSTING:
- 1 small (4 serving size) box instant vanilla pudding mix
- Reserved bowl of the chilled pineapple-lemon mixture (about 1 1/8 cups)

- 2 sticks (1-cup) unsalted butter
- 1/2 cup sugar
- 1 cup light brown sugar (I used a mixture of light and dark)
- 1 extra-large egg
- 1 egg yolk (from another egg)
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 cup uncooked oats, but not instant (I used quick-cooking)
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 teaspoon ground cinnamon, optional
- 2/3 cup white chocolate chips
- 3/4 cup semi-sweet chocolate chips
- 1 cup roughly broken pecans (toasted, if desired. I didn't.)

- 1 (12-16 ounce) bag frozen cooked medium shrimp, thawed and tails removed
- 2/3 cup coarsely chopped red bell pepper
- 1/2 tablespoon butter (I used salted)
- 3/4 cup whole milk
- 4 ounces (Half of 8 oz pkg) cream cheese, cut into pieces
- 1/3 cup grated Parmesan cheese (I used Parmesan-Romano blend)
- 3/4 - 1 teaspoon freshly cracked black pepper
