- Pumpkin Donuts
- 1/4 c. butter, melted
- 1/4 c. nonfat Greek yogurt
- 1 1/2 c. pumpkin puree
- 2 large eggs
- 1 tsp. vanilla extract
- 1 c. granulated sugar
- 2 c. all-purpose flour
- 1 tsp. ground cinnamon
- 1/4 tsp. ground nutmeg
- 1/4 tsp. ground ginger
- 1 tsp. salt
- 1 1/2 tsp. baking powder
- Chocolate Icing
- 1/4 c. butter
- 2 T. unsweetened cocoa powder
- 1/4 c. milk
- 1 1/2 c. powdered sugar
- 1/2 tsp. vanilla extract

- 1 cup butter, softened
- 1 cup sugar

- 1 (7-ounce) can chipotle chiles in adobo sauce
- 1 tablespoon butter
- 1 cup chopped red bell pepper
- 1/2 cup diced Canadian bacon (about 2 ounces)
- 1 cup thinly sliced green onions
- 2 tablespoons all-purpose flour
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground cumin
- 2 1/4 cups 2% reduced-fat milk
- 2 cups (8 ounces) shredded reduced-fat sharp cheddar cheese, divided
- 2 tablespoons chopped fresh cilantro
- 8 cups hot cooked farfalle (bow tie pasta) or other short pasta
- Cooking spray
Baked Pasta with Spinach, Ricotta, and Prosciutto

Step 1 Preheat oven to 400 degrees
- 1 pound gemelli (or other pasta)
- 6 ounces sliced prosciutto
- 2 packages (10 ounces each) frozen chopped spinach, thawed and squeezed of excess moisture
- 2 cups milk
- 2 cups ricotta cheese
- 1 garlic clove, minced
- Coarse salt and ground pepper
- 1/2 cup grated Parmesan
Red Cabbage and Chicken Asian Salad with Tangy Cilantro Dressing

This is perhaps the best Asian chicken salad I have ever had
- Dressing:
- Red Cabbage and Chicken Asian Salad with Tangy Cilantro Dressing
- Makes 3-4 servings, recipe adapted from Cooking New American.
- 1/2 tsp. ginger puree or minced fresh ginger
- 1/2 tsp. garlic puree or minced fresh garlic
- 1/4 cup finely chopped fresh cilantro
- 3 T peanut butter (or more, use "natural" low-sugar peanut butter for South Beach Diet)
- 1 T fresh squeezed lemon juice
- 2 T peanut oil
- 3 T soy sauce (low sodium is ok)
- 1 T very hot water
- 1 T Splenda, sugar, or Agave Nectar
- Salad:
- (You can vary the proportions of different ingredients based on what you have.)
- 2 - 3 cups very thinly sliced red cabbage (use a mandoline to slice the cabbage if you have one)
- 1/2 -1 cup diagonally sliced sugar snap peas (carrots or red bell peppers would also be good, or use a combination of veggies)
- 1/3 cup diagonally sliced green onions (scallions)
- 1 -2 cups diced cooked chicken
- Garnish:
- 2-3 T finely chopped fresh cilantro
- 1/4 cup finely chopped almonds or peanuts (I only had almonds, but next time I'd use peanuts)

- 1 pound ground beef or turkey
- 1/2 cup diced onion
- 1 (1 ounce) taco seasoning packet (or this homemade taco seasoning)
- 6-8 snack sized bags of Fritos or Doritos

- 1/4 cup soy sauce
- 3 Tbsp fresh ginger, peeled and finely chopped
- 1/4 cup canola oil
- 2 Tbsp hoisin sauce
- 1 Tbsp sesame oil
- 1 tsp Sriracha sauce
- 1 tsp kosher salt
- 2 large chicken breasts, boneless and skinless
- 1/4 cup red wine vinegar
- 1/4 cup finely chopped green onions (white and green parts)
- Salad -
- 1 lb Napa cabbage, very thinly sliced
- 2 carrots, grated
- 3 green onions, thinly sliced and cut on the diagonal
- 2/3 cup freshly cut cilantro leaves, coarsely chopped
- 1/2 cup slivered almonds, dry toasted
- 1 tsp white sesame seeds, toasted
- 1 tsp black sesame seeds, toasted.
Asian Rotisserie Chicken Salad

Step 1 Make dressing: In a blender, combine cilantro, lime juice, and oil; season with salt and pepper
- 2 cups fresh cilantro leaves and soft stems
- 1/4 cup fresh lime juice (from 2 limes)
- 1/4 cup vegetable oil
- Coarse salt and ground pepper
- 1 rotisserie chicken (about 2 1/2 pounds), skin and bones removed, meat shredded (about 4 cups)
- 1/4 medium red cabbage (8 ounces), cored and thinly sliced crosswise
- 1 red bell pepper (ribs and seeds removed), thinly sliced
- 2 scallions, thinly sliced
- 1 large head romaine lettuce, torn into bite-size pieces
- 1/2 cup cashews
Royal Icing for Christmas Sugar Cookies

Combine the confectioners' sugar, meringue powder and 3/4cup water in a large bowl
- 2 pounds confectioners' sugar
- 1/2 cup plus 2 tablespoons meringue powder (egg white powder)

Cheesy Mashed Potatoes with Green Chile

- 5 lbs golden yellow potatoes (russets would work as well), peeled and then chopped into approximately 2" pieces
- 1/2 cup butter, room temp is easiest
- approximately 1/2 cup heavy cream, adjust according to the creaminess and thickness that you prefer (milk works fine for this, the cream simply creates a more decadent dish)
- 7 oz chopped green chiles
- 2 teaspoons kosher salt, divided
- freshly cracked pepper, to taste
- 1/2 teaspoon granulated garlic, garlic powder works as well
- 1 cup shredded cheddar cheese
