When looking for a light, healthy snack, look no further than the iceberg wedge salad
- For blue cheese dressing:
- 1 Iceberg lettuce
- 4 slices prosciutto
- 1/2 medium purple onion, thinly sliced
- Chives, for garnishing
- Black pepper, to taste
- 100 g blue cheese, crumbled
- 1/3 cup low fat sour cream
- 2 tbsp mayonnaise
- 2 to 3 tbsp buttermilk
- 2 tsp apple cider vinegar
- 1/4 tsp worcestershire sauce, to taste
- 1 tsp wholegrain mustard
- Pinch cayenne pepper, to taste

- 2 Cups of Sugar
- 2 Cups of Water
- 1 tbsp of Lemon Juice
- 2 tsp of Orange Blossom Water
- For Künefe:
- 450 g of Shredded Phyllo Dough

- 1 Cup of Melted Unsalted Butter + extra for frying
- 1/2 Cup of Milk

- 11/2 tbsp lemon juice
- 125 g fresh blueberries
- For crumb topping:
- 1/2 cup brown sugar
- 1/3 cup flour
- 1/4 cup unsalted butter + more for greasing, softened
- 11/2 tsp ground cinnamon
Buttermilk Pancakes with Caramelised Apples

Pancakes are the undisputed kings of the breakfast table
- For Buttermilk Pancakes:
- Dry Ingredients:
- 140 g of Plain Flour
- 1 tsp of Baking Powder
- 1/2 tsp of Baking Soda
- 1/4 tsp of Salt
- 2 tbsp of Sugar
- Wet Ingredients:
- 1 Egg
- 1 Cup of Buttermilk
- 40 g of Melted Butter
- 1/2 tsp of Vanilla Bean Paste
- Others:
- Sunflower oil
- Maple Syrup
- Additional Butter for Spreading
- Caramelised Apples:
- 2 Granny Smiths (cut each apple to 12 to 16 slices depending on the size of the apple)
- 30 g of Butter
- 3 tbsp of Sugar
- Salt & Black Pepper (to taste)
- Ground Cinnamon (to taste)
Classic Vanilla Panna Cotta with Oreo, Chocolate & Blueberries

I always say that I have a separate stomach for dessert
- For vanilla panna cotta:
- 2 tbsp of Water
- 1/2 tbsp of Powdered Gelatin
- Neutral tasting oil (for oiling the moulds)
- 1 1/4 Cups of Heavy Cream
- 3/4 Cup of Full Cream Milk
- Vanilla Bean from half Vanilla Pod
- 3 tbsp of Sugar (to taste)
- For pairings:
- Blueberries
- 2 - 3 Oreo Cookie (cream removed and roughly crushed)
- Block of Good Quality Chocolate for chocolate shavings (Chilled)

- 6 tablespoons butter, softened plus extra for greasing, divided
- 10 tablespoons demerara sugar
- 2 tablespoons black treacle
- 1/2 cup milk
- 3/4 cups muscovado sugar
- 3 1/2 tablespoons butter, cut into pieces
- 1 cup double cream
- 1 tablespoon black treacle
Peach & Blackberry Galette

- For galette pastry:
- 600 g peaches, pitted and sliced
- 150 g blackberries
- 2 tbsp honey
- 1 tsp ground cinnamon
- 1 tsp vanilla bean paste
- 1/4 cup almond meal
- 1 tbsp brown sugar
- 11/4 cup plain flour
- 1 tbsp caster sugar
- 1/4 tsp salt
- 115 g chilled unsalted butter, cut into small cubes
- 1/2 tsp vanilla bean paste
- 3 to 5 tbsp ice water, as required
- For egg wash:
- 1 egg
- 1 tsp milk
