- 1 tbsp of Honey
- 1/2 tsp of All Spice (to taste)

- For the cake:
- 200 ml of Vegetable Oil
- 250 g of Golden Caster Sugar
- 3 Eggs (yolks and whites separated)
- 3 tbsp of Whole Milk
- 100 g of Pineapple + 3 thin slices for dried pineapple flowers or more as preferred
- 2 Ripe Bananas (peeled)
- 300 g of Plain Flour
- 1 tbsp of Baking Powder
- 1 tsp of Ground Cinnamon
- 75 g of Chopped Pecans
- Unsalted Butter (for greasing)
- For the frosting:
- 180 g of Unsalted Butter (softened)
- 150 g of Icing Sugar (sifted)
- 450 g Full-fat Cream Cheese
- 1 tsp of Vanilla Bean Paste

- For the pastry:
- 350 g of Plain Flour
- 4 tbsp of Icing Sugar
- 2 tbsp of Cornstarch
- 1/4 teaspoon salt
- 225 g of good quality Unsalted Butter (softened to room temperature)
- 2 Egg Yolks
- 1/4 tsp of Vanilla Bean Paste
- For egg wash:
- 1 Egg Yolk
- 1/2 tbsp of Condensed Milk
- For pineapple paste:
- 2 Fresh Pineapples or 3 cans of Sliced Pineapples (20 oz each)
- Heaping 1/2 Cup of Sugar (to taste)
Red Wine Poached Pears with Mascarpone Centres

Elegant and sophisticated, yet easy enough for the average home cook
- For red wine poached pears:
- 4 to 6 Firm Bosc Pears
- 3 Cups of Red Wine (we used Merlot)
- 1 Cup of Sugar
- 2 Cinnamon Sticks
- 2 Cloves
- 1 Vanilla Pod
- 1 Bay Leaf
- 1 Star Anise
- 8 Black Peppercorns
- Peel of 1 Lemon + 1 tbsp of Lemon Juice
- For mascarpone filling:
- 100 g of Mascarpone
- 1 tbsp of Honey
- 2 to 3 drops of Vanilla Bean Paste
- Pinch of Cinnamon (to taste)
Lemon Meringue Tart

American chef Thomas Keller once remarked," I've been doing the same lemon tart for fifteen years
- For Vanilla Shortcrust Pastry:
- 175 g of Plain Flour
- 1 tbsp of Icing Sugar
- 1/2 tsp of Salt
- Seeds of 1 Vanilla Bean
- 100 g of Chilled Butter (diced)
- 1 Egg Yolk (save the white for the meringue later)
- 2 - 4 tbsp of Cold Water
- For Lemon Curd Filling:
- 100 g of Brown Sugar
- Zest of 2 Lemons
- 2 tbsp of Corn Flour
- 125 ml of Lemon Juice (about 2 to 3 lemons, strained)
- Juice of 1 Small Orange (strained)
- Water
- 85 g of Chilled Butter
- 3 Egg Yolks + 1 Whole Egg (save the whites for the meringue later)
- For Italian Meringue:
- 4 Egg Whites
- 200 g of Caster Sugar
- 75 ml of Water

- For chicken marinade:
- 100 g of Malt

- 2 Shallots (Minced)
- 1/2 Cup of Beer
- 1 tbsp of Dijon Mustard
- 2 tbsp of Soy Sauce
- 1 tbsp of Honey

- For the sponge cake:
- 150 g of Good Quality White Chocolate (broken into smaller chunks)
- 200 g of Unsalted Butter + extra for greasing (diced & softened)

- 200 g of Self-Raising Flour
