Copycat KFC Coleslaw

Whisk together all the ingredients except for the shredded cole slaw mix
- 1/2 cup mayonnaise (I use light)
- 1/4 cup buttermilk
- 1 1/2 Tbls apple cider vinegar
- 2 Tbls lemon juice (fresh is best)
- 1/3 cup sugar
- 1/2 tsp salt
- 1/8 tsp pepper
- 1/2 tsp celery seed
- 16 oz shredded bagged cole slaw mix

Preheat oven to 350. Line muffin pan with paper liners Cream butter and sugar in mixer until fluffy
- Cupcakes:
- 3 cup Flour
- 1 tsp Baking Powder
- 1/2 tsp Salt
- 1 cup softened Butter
- 2 cup Sugar
- 3 Eggs
- 2 tsp Vanilla
- 16 oz Sour Cream
- Frosting:
- 1 cup softened Butter
- 3 tbsp Milk
- 1 tsp Vanilla
- 4 cup Powdered Sugar
- 12 Peppermint Sticks
- 1/4 cup White Sparkling Sugar

Chicken Stuffed Baked Potatoes

Preheat oven to 450°F(230°C)
- 4 medium potatoes
- 1 onion,diced
- 2 garlic cloves, minced
- 1 red pepper, chopped
- 1/2 chicken breast, (200g) cut in small pieces
- 1 tbsp (14g) olive oil
- 1/2 tsp (1g) nutmeg, optional
- 1 cup (100g) grated Cheddar cheese
- Fresh parsley
- Salt and freshly ground black pepper, to taste

- 2 1/2 sticks (10 oz.) unsalted butter, room temperature
- 1 c. light brown sugar
- 1/2 c. white sugar
- 1 large egg, room temperature
- 1 large egg yolk, room temperature
- 1 tbsp. vanilla
- 2 c. flour
- 1 c. quick-cooking or old-fashioned rolled oats
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. kosher salt
- 1 1/2 c. chocolate chips, either semi-sweet or white chocolate
