Cinnamon And Sweet Potato Bread

- 1 1/2 About 1 1/2 cups cooked, mashed sweet potatoes (2 medium or 1 very large), cooled
- 2 large eggs
- 1/2 cup canola or vegetable oil
- 1/4 cup buttermilk (or yogurt, Greek yogurt, or sour cream)
- 1 teaspoon vanilla extract
- 1 3/4 cups all-purpose flour
- 1 1/4 cups granulated sugar
- 1/4 cup light brown sugar, packed
- 2 teaspoons baking soda
- 1 tablespoon ground cinnamon
- 1 teaspoon ground ginger
- 1 teaspoon ground nutmeg
- 1/2 teaspoon ground allspice
- 1/2 teaspoon ground cloves
- pinch salt, optional and to taste
Tropical Sunshine Cake

- 1 pkg. (18.25 oz.) yellow cake mix
- 1 can (12 fl. oz.) NESTLÉ® CARNATION® Evaporated Milk
- 2 large eggs
- 1 can (20 oz.) crushed pineapple in juice, drained (juice reserved), divided
- 1/2 cup chopped almonds (optional)
- 3/4 cup sifted powdered sugar

Coconut-Mocha Cupcakes

For the Cupcakes 1. Preheat the oven to 350 degrees F
- For the Cupcakes
- 1 3/4 cups all-purpose flour
- 2 cups sugar
- 3/4 cups unsweetened cocoa powder
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 1 teaspoon kosher salt
- 1 cup buttermilk, shaken
- 1/2 cup vegetable oil
- 2 eggs, at room temperature
- 1 teaspoon pure vanilla extract
- 1 cup freshly brewed hot coffee
- For the Mocha Buttercream
- 4 sticks (2 cups) unsalted butter, room temperature
- 2 teaspoons pure vanilla extract
- 1/8 teaspoon fine sea salt
- 2/3 cup unsweetened cocoa powder
- 5 cups confectioners' sugar (powdered sugar)
- 3-5 tablespoons cold coffee
- For the Garnish
- 1 1/2 cups coconut, lightly toasted (see recipe notes below)
ZUCCHINI PARMESAN CRISPS

- 1/2 cup vegetable oil
- 1 cup Panko*
- 1/2 cup grated Parmesan cheese
- 2 zucchinis, thinly sliced to 1/4-inch thick rounds

- 1/3 cup butter, melted
- 1 cup sugar
- 3 tablespoons lemon juice

Banana Macadamia Nut Bread

Heat oven to 350 degrees. In large mixer bowl combine first 8 ingredients
- 2 c. flour
- 3/4 c. sugar
- 1/2 c. butter, softened
- 2 eggs
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 tbsp. grated orange peel
- 1 tsp. vanilla
- 1 c. mashed ripe bananas (2 medium)
- 1/4 c. orange juice
- 1 c. flaked coconut
- 3/4 c. coarsely chopped macadamia nuts or walnuts
Classic Cheesecake

Bake this ahead without any topping, and keep in the freezer for when company arrives
- Crust:
- 6 tbsp. hard margarine
- 1 1/2 c. graham cracker crumbs
- 1 tbsp. sugar
- Filling:
- 2 1/2 c. creamed cottage cheese, smoothed in blender
- 1 c. sugar
- 1/4 c. flour
- 4 oz. light cream cheese, softened
- 2 large eggs
- 1/2 c. skim evaporated milk
- 1/4 c. milk
- 1 1/2 tbsp. lemon juice
- 1 tsp. vanilla
