Zucchini Banana Bread

In a large bowl, combine the first six ingredients
- 1-1/2 cups all-purpose flour
- 1 cup sugar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 egg
- 1 cup mashed ripe bananas
- 1/2 cup canola oil
- 1/2 teaspoon banana extract
- 1/2 teaspoon vanilla extract
- 1 cup shredded zucchini
- 1/2 cup chopped walnuts
Beef & Barley Vegetable Soup Mix

Measure all soup mix ingredients into a jar or ziploc bag, leaving bay leaf on top
- Soup Mix:
- 1/2 cup barley
- 1/2 cup dried split peas
- 3 beef bouillon cubes -- crumbled
- 1/4 teaspoon ground black pepper
- 1/2 teaspoon
- dried basil
- 1/4 teaspoon dried oregano
- 1 bay leaf
- Add ins:
- 2 tbsp. vegetable oil
- 1 lb. stew meat - cut in 1" cubes
- 6 cups water
- 15 oz. canned tomatoes
- 3 stalks celery, chopped
- 3 carrots, chopped
Banana-Zucchini Bread

In a bowl, beat eggs. Blend in sugar and oil
- 4 eggs
- 2 cups sugar
- 1 cup vegetable oil
- 2 medium ripe bananas, mashed (about 1 cup)
- 3 cups all-purpose flour
- 1-1/2 teaspoons baking powder
- 1-1/2 teaspoons baking soda
- 1-1/2 teaspoons ground cinnamon
- 1 teaspoon salt
- 1-1/2 cups shredded unpeeled zucchini
- 1 cup chopped pecans
Asparagus, Shrimp and Shells Bake

Cook pasta to desired doneness as directed on package
- 6 oz. (about 2 cups) uncooked medium shell pasta
- 2 tablespoons margarine or butter
- 2 garlic cloves, minced
- 2 tablespoons all purpose or unbleached flour
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 cups milk
- 8 oz. (2 cups) shredded Swiss cheese
- 1 lb. shelled deveined cooked medium shrimp, tails removed
- 1 (9-oz.) pkg. Green Giant® Frozen Asparagus Cuts, thawed
- 1/4 cup chopped fresh parsley
Pumpkin Cobbler

Preheat oven to 350 degrees F (175 degrees C)
- cooking spray
- 1/2 cup white sugar
- 2 eggs, beaten
- 1 (15 ounce) can pure pumpkin (such as Libby's®)
- 3/4 cup evaporated milk
- 1 teaspoon orange extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground cloves
- 1/4 teaspoon salt
- 1 (9 ounce) package yellow cake mix (such as Jiffy® Golden Yellow cake mix)
- 1/4 cup butter, melted
Crockpot Chicken Teriyaki

Yields: One gallon-sized bag of chicken teriyaki with 3 servings
- One pound boneless skinless chicken breasts
- 1/2 cup honey
- 1/2 cup low sodium soy sauce
- 1/4 cup rice wine vinegar (I subbed red wine vinegar)
- 1 small onion, diced
- 1 large clove garlic, minced
- 1-inch ginger root, peeled and minced
- 1/4 teaspoon black pepper
- One bag frozen stir fry veggies (Mine was 14.4 oz)
Makeover Almond Poppy Seed Cake

- GLAZE:
- 1-3/4 cups sugar
- 2 eggs
- 1/2 cup unsweetened applesauce
- 1/3 cup canola oil
- 1-1/2 cups fat-free milk
- 2 teaspoons almond extract
- 1-1/2 teaspoons vanilla extract
- 1 teaspoon butter flavoring
- 1-1/2 cups cake flour
- 1-1/2 cups all-purpose flour
- 3-1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 tablespoons poppy seeds
- 3/4 cup confectioners' sugar
- 1 tablespoon orange juice
- 1 teaspoon almond extract
- 1/2 teaspoon vanilla extract

Apple Cranberry Apple Muffins

- 2 c. unpeeled, cored, shredded apples
- 1 1/3 c. sugar
- 1 c. chopped cranberries
- 1 c. peeled, shredded carrots
- 1 c. chopped walnuts
- 2 1/2 c. flour
- 1 tbsp. baking powder
- 2 tsp. baking soda
- 1/2 tsp. salt
- 2 tsp. ground cinnamon
- 2 tsp. ground coriander
- 2 large eggs, beaten
- 1/2 c. safflower oil
Raspberry Yogurt Cake

- 3 Tbsp (45 ml) low-fat yogurt
- 2 Tbsp (30 ml) butter, melted
- 1 large egg
- 1/2 tsp (2.5 ml) Epicure Vanilla Extract
- 6 Tbsp (90 ml) flour
- 3 Tbsp (45 ml) sugar
- 1 tsp (5 ml) Epicure Cinnamon (Ground)
- 1/2 tsp (2.5 ml) Epicure Baking Powder
- 2 Tbsp (30 ml) frozen raspberries
