- 1 lb fresh celery
- 1 medium russet or starchy potato
- 2 T Earth Balance
- 1 medium onion, roughly chopped
- 1 clove of garlic, minced (or more?)
- 1/2 c dry white wine
- 4 cups vegetable stock
- Himalyan pink salt, or whatever you've got, to taste
- ground pepper

How To Make Homemade Lavender and Rose Simple Syrups - The View from Great Island

In a small saucepan heat the water, sugar, and lavender until it comes to a simmer, stirring to dissolve the sugar
- Lavender Simple Syrup
- 1 cup water
- 1 cup sugar
- 3 Tbsp lavender buds, rinsed (remove the buds from the stems before they flower)
- tiny touch of violet gel food coloring (optional)
- Rose Simple Syrup
- 1 cup water
- 1/2 cup Rose Water (food grade, not the kind for cosmetic use)
- 1 cup sugar
- 1 heaping cup rose petals, rinsed (the darker your petals, the more color you will get)
- Heat the water, rose water, sugar and rose petals in a small saucepan until it comes to a simmer, stirring to dissolve the sugar. Simmer gently for 5 minutes.
- Let the liquid cool, then strain into a jar or bottle with a tight fitting lid.
- Refrigerate until ready to use. It will keep for a month.
Vegan Southern Biscuits

- 2 cups organic, (preferably local) whole wheat pastry flour
- 1 Tbsp non-aluminum baking powder
- 1/2 tsp baking soda
- 3/4 tsp pink Hawaiian or sea salt
- 4 Tbsp non-dairy, unsalted butter (I use Earth Balance) that's 4 T, (note to self, NOT an entire Earth Balance buttery stick! *sigh I have done this twice
- 1 cup unsweetened PLAIN almond or hemp or other nut milk + 1 Tbsp fresh organic lemon juice
Hoisin Vegan Black Bean Burger with Spicy Sesame Sauce [GF]

For the spicy sesame sauce Combine the ingredients in a bowl and mix until thoroughly combined
- For the spicy sesame sauce
- 1/2 cup vegan mayo
- 1 tsp. Sriracha
- 1/2 tsp. toasted sesame oil
- For the hoisin burger
- 3/4 cup quinoa, rinsed
- Kosher salt
- 2 tsp. extra-virgin olive oil
- 1 small onion, chopped
- 1 celery stalk, chopped
- 1 small carrot, chopped
- 4 cloves garlic, minced
- 2 scallions, chopped
- 1-15 oz. can black beans, drained and rinsed
- 2 Tbs. peanut butter
- 1 Tbs. gluten-free tamari
- 1 Tbs. + 3 Tbs. hoisin sauce
- 1/3 cup cashews, soaked for a few hours
- 1 tsp. ground ginger or 1 Tbs. fresh ginger, minced
- 1 tsp. 5-Spice Powder
- 2 Tbs. fresh cilantro, chopped
- 1 bunch of scallions
- 4 oz. bean sprouts
- 1 Tbs. toasted sesame oil
- 2 Tbs. canola oil
- 4 gluten-free buns

First things first: peel and chop the onions in half
- 4 medium onions
- 1 cloves of garlic, peeled and minced
- 750 ml (3 cups) vegetable stock
- 2 about 2 glasses of white wine

Wild mushroom croquette with fried oak moss

Dice the mushrooms into small pieces
- 200 g wild mushrooms (eg wood blewit and parasols), trimmed and cleaned as necessary
- 2 clove garlic, peeled and finely chopped
- 30 g earth balance
- 45 g plain flour
- 250 ml nut milk
- 100 g daiya cheddar cheese, grated
- Sea salt and freshly ground black pepper
- For the breadcrumbing
- 2 Flax Eggs
- 100 g Breadcrumbs
- 50 g Oak moss, finely chopped
- Flour to dust
- 50 g oak moss for frying
- Sunflower oil for frying
- To serve
- lemon wedges
- sweet smoked paprika
Peanut Noodles With Tofu

- 4 oz soba noodles
- 1/2 c creamy reduced-sodium natural peanut butter
- 3 Tbsp reduced-sodium soy sauce
- 3 Tbsp rice wine vinegar
- 1/2 Tbsp toasted sesame oil
- 2 tsp chile paste with garlic (optional), see note
- 1 tsp sesame seeds, toasted
- 4 oz light firm tofu, drained, patted dry, and cut in 1/2" cubes
- 2 c shredded or grated carrots (about 2 lg)
- 3 scallions, thinly sliced (1/4 c)
