Classic Chocolate Chip Cookies

Preheat oven to 350 degrees F
- 1 tablespoon ground flaxseed
- 1 1/4 cups sifted spelt four
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon sea salt
- 3 tablespoon organic light brown sugar
- 1/3 cup coconut oil, melted
- 1/4 cup maple syrup
- 1 teaspoon vanilla
- 1 teaspoon blackstrap molasses
- 1/2 cup grain sweetened or vegan dark chocolate chips
Cashew Butter

Put cashews in food processor and allow to process for a few minutes until broken down
- 1 cup cashews
- 1 tbsp melted coconut oil
- 2 tbsp unsweetened coconut flakes
- 2 tbsp vegan chocolate chips, melted
- 1/2 tbsp agave
- 1 tsp vanilla
- sea salt to taste
Baked Zucchini Chips

Vegan Potato Leek Salad

- 6 potatoes (any kind) washed, not peeled, from your garden, preferably
- I leek, both the green and white parts, sauteed, (or use onion, raw,)
- 2-3 cloves garlic
- 1/2 c veganiaise
- 1/2 c organic dill pickle brine
- 4-5 fresh basil leaves
- 1/2 t oregano
- 1 t himalayan pink salt
- fresh black pepper
- mustard to taste
- 2 stalks celery sliced thin or old bay seasoning
- dill, shredded carrot, parsley, sliced kale as desired
- cooked edamama or cubed firm tofu (soy MUST be organic or it's GMO!)

- 1 cup lukewarm almond milk
- 1/2 cup soy milk plus 1 tablespoon cornstarch
- 3 tablespoons non-hydrogenated vegetable shortening
- 3 tablespoons non-hydrogenated margarine
- 1/2 cup sugar
- 2 tablespoons brown sugar
- 4 cups flour
- 1/4 teaspoon salt
- 1/4 teaspoon nutmeg
- At least 1 quart oil for frying
- 1/3 cup fresh raspberries
- 2 teaspoons cornstarch
- 1/2 cup white wine
- 3 cups powdered sugar
Raw Vegan Chocolate Brownie Balls

Blend everything in your high-speed blender except the dates
- 1/2 cup raw cashews
- 1/2 cup roasted, unsalted peanuts
- 1/2 cup cacao beans
- 1/4 cup cacao powder
- 1/4 cup coconut oil
- 1/4 tsp vanilla powder
- 1 pinch cinnamon
- 1 pinch unrefined sea salt
- 3 un-pitted Medjool dates

- 1 cup yogurt (vegan)
- 1 TBS lemon juice
- 1 garlic clove – minced
- 1/2 cucumber – peeled & diced
- pinch of salt

Spaghetti Squash with Alfredo Sauce

Preheat oven to 400F. Cut squash in half and remove seeds with a soup spoon
- 1 medium to large spaghetti squash
- 2 cups cherry tomatoes
- 15 shiitake or cremini mushrooms
- 2 Tbsp olive oil
- 1/4 tsp sea salt + sprinkle
- Black pepper
- 1/2 cup cashew nuts, soaked for 2 hours
- 1/2 cup filtered water
- 1/2 lemon, juiced + 1/2 tsp zest
- 1 garlic clove
- 1.5 Tbsp nutritional yeast
- 5 fresh basil leaves
- 1/4 tsp dried basil
- 1/4 tsp sea salt
- 1/4 tsp kelp powder
- Pinch nutmeg
- Pinch cayenne pepper

- 1 package extra firm tofu, rinsed, pressed, and sliced 1/4″ thick
- 3 tablespoons finely chopped onion
- 1/2 tablespoon tomato paste
- 1/4 teaspoon ground cumin
- 2 teaspoons tamari sauce
- 1/2 cup ketchup
- 1 tablespoon apple cider vinegar
- 1 1/2 tablespoons agave or maple syrup
- 2 to 4 tablespoons sriracha sauce
- 3/4 teaspoon salt
