Vegan Southern Biscuits 1 Picture

Ingredients

  • 2 cups organic, (preferably local) whole wheat pastry flour
  • 1 Tbsp non-aluminum baking powder
  • 1/2 tsp baking soda
  • 3/4 tsp pink Hawaiian or sea salt
  • 4 Tbsp non-dairy, unsalted butter (I use Earth Balance) that's 4 T, (note to self, NOT an entire Earth Balance buttery stick! *sigh I have done this twice
  • 1 cup unsweetened PLAIN almond or hemp or other nut milk + 1 Tbsp fresh organic lemon juice

Preparation

Step 1

preheat your oven to 450 F (just do it, don't argue)
mix the dry ingredients in a bowl with a whisk
chop up the ONE HALF STICK of Earth Balance into the flour mix till it looks like sand (keep it as cold as possible)
make a well in the center and pour in your nut milk and lemon juice and mix quickly with a wooden spoon. it will be sticky.
nevermind that.
dust a board or surface with a little flour, and turn the dough out of the bowl.
fold it over on top of itself 5-6 times (not really kneading)
pat it into a circle about 1 inch thick
cut it with a glass into approximately seven biscuits which you put into a pan (I use a glass pie pan) with the sides of the biscuits' touching.
push a little dent in the middle of each biscuit and pour on some melted Earth Balance.
Bake for 11 minutes (works for me…make sure and remember what works in your oven.)
