Mini Muffin Spinach and Artichoke Bites

Spinach and artichokes are baked right in to these delicious mini muffins
- 1 box frozen spinach (10 ounces), thawed
- 4 ounces cream cheese
- 2 cans artichokes (14 ounces each), drained and chopped
- 1 1/2 cups biscuit mix
- 1 cup milk
- Nonstick cooking spray
- 1 cup grated Parmigiano Reggiano cheese
BLT Dip

Directions: Preheat oven to 350˚
- Ingredients:
- 1-1/2 pound bacon, cooked, drained, crumbled, and divided
- 2 cups shredded mozzarella cheese
- 2 (8-ounce) packages cream cheese, softened
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 1 cup cheddar cheese (shredded) or to taste
- 1/2 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder (or to taste)
- 1 tablespoons mustard
- 2 cups chopped seeded tomatoes
- 1-1/2 cup shredded Iceberg lettuce
- pepper an salt to taste
- Toasted bread rounds, crackers, or pita chips.

This Recipe is a State Fair Blue Ribbon winner
- Original recipe makes 4 1/2 dozen
- 2/3 cup shortening
- 2/3 cup butter
- 1 1/2 cups white sugar
- 2 eggs
- 2 teaspoons vanilla extract
- 3 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1/3 cup granulated sugar for decoration
SWEET HAWAIIAN CROCK-POT CHICKEN

Combine all together, cook in Crock-pot 6-8 hours
- 2 lb. Chicken tenderloin chunks
- 1 cup pineapple juice
- 1/2 cup brown sugar
- 1/3 cup soy sauce
Italian Wedding Soup

Italian Wedding Soup is very tasty and will warm you up on a chilly night
- MEATBALLS
- 1/2 pound ground beef, thawed
- 1/4 cup onion, chopped
- 1 clove garlic, peeled and minced
- 2 tablespoon parmesan cheese, grated
- 1/2 teaspoon salt
- 1 Tbsp plain bread crumbs
- 1/2 teaspoon dried basil
- 3/4 teaspoon dried parsley
- 1 egg
- SOUP
- 1 tablespoon butter
- 1/2 cup onion, chopped
- 1/2 cup carrot, peeled and sliced into coins
- 2 cloves garlic, peeled and minced
- 8 cups chicken broth
- Salt and pepper for seasoning
- 1/2 cup acini di pepi can use orzo
- 10 ounces frozen spinach, thawed
Maryland Cream of Crab Soup

Bring milk, half and half, and heavy whipping cream to a boil
- 1 pound Maryland jumbo lump crab meat
- 1 tablespoon fresh parsley
- 3 teaspoons OLD BAY Seasoning
- 1/4 cup butter
- 2 pints heavy whipping cream
- 1 quart half and half
- cornstarch
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 1 pint milk
