Salted Caramel Twinkies: Preheat oven to 350°F
- Salted Caramel Twinkies:
- 3/4 cup unsweetened cocoa powder
- 1 1/2 cups all-purpose flour
- 1 1/2 cups sugar
- 1 1/2 tsp. baking soda
- 3/4 tsp. baking powder
- 3/4 tsp. salt
- 2 large eggs, room temperature
- 3/4 cup warm water
- 3/4 cup buttermilk
- 3 Tbsp. vegetable oil
- 1 tsp. vanilla extract

In a large bowl, combine flour and salt; cut in shortening and butter until crumbly
- Crust:
- 2 cups all-purpose flour
- 1/2 tsp. salt
- 6 Tbsp. shortening
- 2 Tbsp. cold unsalted butter
- 5 to 7 Tbsp. orange juice
- Filling:
- 6 Tbsp. unsalted butter, melted, divided
- 1/2 cup packed brown sugar
- 1/2 cup chopped pecans
- 1 cup sugar
- 1/3 cup all-purpose flour
- 3/4 tsp. cinnamon
- 1/4 tsp. ground nutmeg
- 8 cups thinly sliced peeled, tart apples
- Glaze:
- 1/2 cup confectioners' sugar
- 2 to 3 tsp. orange juice
Hot Fudge - Homemade

The hot fudge is thick, rich, dense, fudgy, very intensely chocolaty and not overly sweet
- 2/3 cup heavy cream (or half-and-half)
- 1/2 cup light corn syrup
- 1/3 cup dark brown sugar, packed
- 1/4 cup unsweetened natural cocoa powder
- 1/4 teaspoon salt, optional and to taste
- 6 ounces dark or bittersweet chocolate, finely chopped (such as 3 ounces 54% and 3 ounces 72%)
- 2 tablespoons unsalted butter
- 2 teaspoons vanilla extract
Shortbread Crust with Nuts

Heat oven to 350° F. In a food processor, pulse the nuts and cookies until crumbs form
- 1 cup (4 ounces) nuts such as pecans, almonds, or macadamia
- 1/2 10-ounce box shortbread cookies (such as Lorna Doone)
- 6 tablespoons unsalted butter, cold, cut into pieces

- 1 (12-ounce) package white chocolate chips (2 cups)
- 36 pretzel sticks and rods of various sizes
- 72 mini-marshmallows (about 1 cup)
Honey Oat Bread - No Knead

Bread stays fresh at room temperature, covered, for 3 days
- Bread:
- nonstick spray, such as Pam
- 2 and 3/4 cups white bread flour, plus more as needed
- 1 cup old-fashioned rolled oats (or quick oats)
- 1 and 1/4 teaspoons ground cinnamon
- 1 and 1/2 teaspoons salt
- 1 and 1/4 teaspoons instant active dry yeast, (I suggest Red Star Platinum Yeast)
- 1/2 cup honey
- 2 Tablespoons canola oil
- 1 and 1/2 cups + 1 Tablespoon cold water
- Coating:
- 1 teaspoon ground cinnamon
- 1 Tablespoon granulated sugar

In the bowl of a stand mixer dissolve the yeast in the warm milk and let sit until puffy, about 5 minutes
- 1 packet active dry yeast
- 1 1/4 cups lukewarm milk
- 3 cups King Arthur Unbleached Bread Flour
- 1 cup rolled oats (old-fashioned oats)
- 2 tablespoons butter or margarine
- 1 1/2 teaspoons salt
