Orange Madeleines

Brush the indentations of a madeleine mold with melted butter
- 3 large eggs, at room temperature
- 2/3 cup granulated sugar
- 1/8 teaspoon salt
- 1 1/4 cup flour
- 1 teaspoon baking powder (optional)
- zest of one orange, divided
- 9 tablespoons unsalted butter, melted and cooled to room temperature, plus additional melted butter for preparing the molds
- 3/4 cup powdered sugar
- 3 tablespoon freshly-squeezed orange juice

Lavender lemonade

Lavender Syrup: Add equal parts sugar and water to a medium saucepan and bring to boil
- Glass:
- 1.5 oz Vodka (Ciroc seems appropriate but we used a local Pennsylvania vodka)
- 1.5 oz Lillet Blanc
- 1 oz Lavender Syrup (recipe below)
- 1 oz Lemon Juice
- 2 oz Chilled Soda Water
- French Lavender Flower for Garnish
- Pitcher (makes 4 glasses):
- 3/4 Cups Vodka
- 3/4 Cups Lillet Blanc
- 1/2 Cup Lavender Syrup
- 1/2 Cup Fresh Lemon Juice
- 1/4 Cup Chilled Soda Water for each glass
- French Lavender Flower for Garnish
Batter-Fried Chicken

Cut chicken breasts in half crosswise, which will cook more evenly
- Brine:
- 2-pounds of chicken
- 1 quart cold water
- 1/4 cup salt
- 1/4 cup sugar
- 4 pounds bone-in, skin-on chicken pieces
- Batter:
- 1 cup all-purpose flour
- 1 cup cornstarch
- 5 teaspoons pepper
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1-3/4 cups cold water
- 3 quarts vegetable oil
Blueberry Scones

Too much mixing, kneading, and baking will produce dry and tough scones
- 2 cups all-purpose flour
- 3 tablespoons sugar, plus more for sprinkling tops
- 1 tablespoon baking powder

- Ingredients for the dough:
- 2 cups of all purpose flour
- 1 egg
- 1 tsp salt
- 3/4 cup warm water
- Ingredients for the meat filling:
- 1/2 lb minced/ground beef (80% lean)
- 1 large onion
- 1/2 tsp ground cumin
- 1/2 tsp ground black pepper
- 1/2 tsp salt (alter the salt according to your own taste. Be advised that too little salt will affect the final result)

- 1/2 cup chopped yellow or white onion
- 1 cup half-and-half
- 1 (16-ounce) package frozen chopped broccoli
- 1 (16-ounce) loaf processed cheese (Velveeta or a store brand)
- 2 (14.5-ounce) cans low-sodium chicken broth
- 1 cup julienne-cut carrots (shredded carrots are okay)
- 8 ounces shredded cheddar cheese (2 cups)
