Lemon Squares

In a small mixing bowl, beat butter and ¼ cup sugar until well blended
- 1/3 cup butter, softened
- 1 cup sugar, divided
- 1 cup all-purpose flour
- Dash salt
- 2 eggs, beaten
- 3 tablespoons all-purpose flour
- 1/2 teaspoon baking powder
- 2 tablespoons fresh lemon juice
- 1 tablespoon grated lemon zest
- Powdered sugar

Bring chicken stock to a boil
- 2 Chicken Breasts, cooked and diced
- 1 pound Russet Potatoes, cooked and diced
- 2 cups Corn Kernels (frozen)
- 1/8 cup Onion, diced
- 1/8 cup Red Bell Peppers, diced
- 1 cup Chicken Stock
- 1 cup Heavy Cream
- 1 cup Milk
- 2 t. Sugar
- 2 t. Hot Sauce
- 1/8 cup Fresh Parsley, chopped

- Buttermilk Glaze:
- 2 cups all-purpose flour
- 2 teaspoons baking soda

- 1 can full fat coconut milk
- 1/3 c honey
- 8 tbsp butter, divided
- 3 packs macadamia nut cookies ( cookkwees Maui Cookies brand) crushed to make 2 cups of cookie crumbs, there might be a little left over - use all of it for a thicker crust if desired
- 1 cup dried mango, diced
- 1 cup dried pineapple, diced
- 1 cup salted macadamia nuts, chopped
- 1/2 c mango pineapple jam
- 1 tsp hawaiian sea salt
- 1 cup chocolate bliss coconut chips
- 1 cup white chocolate chips
- 1 1/4 c shredded sweetened coconut

- 4 C. thinly sliced red cabbage
- 1/4 C. unsweetened dried cranberries
- 1/4 C. lite rice vinegar
- 3 Tbs. agave nectar
- 1 Tbs. white wine vinegar
- 1/4 C. nonfat Voskos Greek yogurt
- 1/4 tsp freshly ground black pepper
- 1 C. diced apple
- 3 Tbs. chopped pecans, toasted
- 9 oz. shredded or cubed cooked chicken
