Cranberry Red Cabbage Chicken Salad

Ingredients
- 4 C. thinly sliced red cabbage
- 1/4 C. unsweetened dried cranberries
- 1/4 C. lite rice vinegar
- 3 Tbs. agave nectar
- 1 Tbs. white wine vinegar
- 1/4 C. nonfat Voskos Greek yogurt
- 1/4 tsp freshly ground black pepper
- 1 C. diced apple
- 3 Tbs. chopped pecans, toasted
- 9 oz. shredded or cubed cooked chicken

Preparation
Step 1
Cube cooked chicken and slice red cabbage.
Toss chicken, cabbage, apples, and cranberries in a medium-sized bowl.
Mix remaining ingredients (excluding pecans).
Coat chicken mixture with dressing.
Chill until served.
Before serving add toasted chopped pecans.
