Olive Garden Bolognese - Copycat

Heat oil in a large pan. Add celery, carrot, onion, and garlic and cook about 5 minutes
- Optional:
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 1 carrot, finely chopped
- 1 celery, finely chopped
- 2 garlic cloves, finely chopped
- 1/2 pound ground beef
- 6 ounces Italian sausage, skinned
- 1 cup red wine (Merlot or Pinot Nior recommended)
- 28 ounces crushed tomatoes, chopped
- 1 teaspoon fresh rosemary, chopped (or 1/4 teaspoon dry)
- 1 teaspoon fresh sage

Peach Crumble Bars

- Peach filling:
- 5 C diced peaches
- 2 T lemon juice
- 1/2 C all-purpose flour
- 1 t cornstarch

- 3 C all-purpose flour

Russian Krendl Bread

In a small bowl, dissolve yeast and sugar in warm cream
- BREAD:
- 1 package (1/4 ounce) active dry yeast
- 3 tablespoons sugar
- 3/4 cup warm half-and-half cream or milk (110° to 115°)
- 1/4 cup butter, softened
- 2 egg yolks
- 1-1/2 teaspoons vanilla extract
- 1/2 teaspoon salt
- 2-3/4 to 3-1/4 cups all-purpose flour
- FILLING:
- 1 cup apple juice
- 1 large apple, peeled and chopped
- 2/3 cup finely chopped dried apples
- 1/3 cup finely chopped dried apricots
- 1/3 cup chopped pitted dried plums
- 2 tablespoons plus 1/4 cup butter, divided
- 4 tablespoons sugar, divided
- 1/2 teaspoon ground cinnamon

Pumpkin Cinnamon Rolls

Yield: 9 Pumpkin Cinnamon Rolls
- Filling:
- 1/2 cup of pumpkin puree
- 1/3 cup of milk
- 2 tablespoons of unsalted butter
- 2 tablespoons of light brown sugar
- 1 large egg
- One standard package of active dry yeast (7g)
- 2 1/2 cups of bread flour (or all-purpose flour)
- 1/2 teaspoon of pumpkin pie spice
- 1/4 teaspoon of nutmeg
- 1/2 cup of light brown sugar
- 1 tablespoon of granulated sugar
- 1 teaspoon of pumpkin pie spice
- 1/2 teaspoon of cinnamon sugar spice
- 1/4 to 1/2 teaspoons of ground cinnamon
- 4 tablespoons of melted butter
- 1/4 teaspoon of nutmeg
- extra pumpkin pie spice for sprinkling*
- Glaze:
- 1 cup of powdered sugar
- 1-2 tablespoons of milk
- 2 teaspoon of vanilla extract
Blueberry Pie Bars

The bars are easier to make than pie, with no mixer or rolling pin needed
- CRUST AND CRUMBLE TOPPING:
- 1/2 cup unsalted butter, melted
- 1/2 cup granulated sugar
- 1/4 cup light brown sugar, packed
- 1 1/2 cups all-purpose flour
- pinch salt, optional and to taste
- FILLING:
- 1 large egg
- heaping 1/2 cup plain or vanilla Greek yogurt; or sour cream (lite is okay)
- 1/3 cup granulated sugar
- 2 teaspoons vanilla extract
- 1 tablespoon all-purpose flour
- BLUEBERRY LAYER:
- 12 ounces (2 cups) blueberries (fresh or frozen; I used frozen and didn't thaw)
- 1/3 cup granulated sugar (or 1/2 cup if berries are sour)
- 2 tablespoons lemon juice
- 2 teaspoons cornstarch
Autumn Simmering Potpourri-Homemade

Add the spices to a small saucepan, cover with at least 2 cups of water, and turn to a low simmer
- Substitute for Cardamom pods:
- 1 cinnamon stick
- 2 whole star anise
- 3 whole allspice berries
- 3 whole cloves
- 5 whole black peppercorns
- 2 whole cardamom pods
- For 10 whole pods substitute 1/2 teaspoon ground cardamom OR substitute ground cinnamon, or combine half cinnamon and half nutmeg
- Substitute for Allspice:
- Combine 1/4 teaspoon cinnamon and 1/2 teaspoon ground cloves
- Substitute for Star Anise:
- Substitute anise seed or Chinese five-spice powder
- Equivalents:
- 1 teaspoon anise seed = 2 crushed star anise
Starbucks Birthday Cake Frappuccino
