Cranberry-Walnut Chicken Salad

Really complicated directions: Toss together all ingredients in a large bowl until combined well
- Variations:
- 4 cups cubed (1/2 inch) cooked chicken (about 1 3/4 lb)
- 1 cup walnuts, toasted and chopped
- 1 celery rib, diced into small bits (1 cup)
- 2 or more tablespoons finely chopped shallot
- 1 cup dried cranberries
- 2/3 to 3/4 cup mayonnaise
- 3 tablespoons tarragon vinegar, if you have it, or champagne or white wine vinegar works well, too
- 2 tablespoons finely chopped fresh tarragon or herb or your choice
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- I like to eat mine on top of chopped Romaine lettuce, or with toasted pocketless pita wedges.
- Are almost endless, but this is particularly good with leftover Thanksgiving turkey and chopped pecans.
- Grapes instead of cranberries
Cabot Cheddar Cheese Soup

In large saucepan, melt butter over medium-low heat
- 4 tablespoons Cabot Salted Butter
- 1/2 cup sifted King Arthur Unbleached All-Purpose Flour
- 2 cups milk, heated
- 2 cups half-and-half or reduced-fat chicken broth, heated
- 1 1/2 cups Cabot Sharp Cheddar, diced
- 1/2 teaspoon dry mustard
- 1/4 teaspoon each salt and ground black pepper
- Crumbled bacon or chopped hard-boiled egg for garnish (optional)
Eggnog Cinnamon Rolls with White Chocolate Chips

To make the dough: Place yeast and sugar into a stand mixer with the dough hook attached
- Rolls:
- 2 1/4 teaspoons active dry yeast (I like to use Red Star Platinum yeast)
- 1/4 cup warm water
- 2 tablespoons light brown sugar
- 1/2 cup (stick) unsalted butter, melted
- 1 cup warm eggnog
- 1/4 cup plain vanilla yogurt (or if you have leftover mashed potatoes lying around use those, they work great!)
- 1 egg
- 4 cups all-purpose flour
- 1/4 teaspoon salt
- 1 vanilla bean, scraped (optional)
- 1 teaspoon vanilla extract
- Filling:
- 1/2- 3/4 cup brown sugar
- 2 tablespoons cinnamon
- 1 stick butter (1/2 cup), very, very soft (I like to place mine in the microwave for 15 seconds until extremely softened)
- 1/2 cup white chocolate chips (optional)
- Frosting:
- 2 ounces cream cheese, softened
- 2 ounces white chocolate melted
- 2 tablespoons salted butter, melted
- 2-3 tablespoons eggnog
- 1 1/2 cups powdered sugar
- 1 teaspoon vanilla extract
Old-fashioned Oatmeal Cake

Pour into 9x13 sprayed baking dish and bake 40-45 minutes
- Then add:
- 1 cup quick oatmeal (the regular kind works fine too).
- Pour 1 1/2 cups boiling water over oatmeal and let stand for 20 minutes.
- 1 cup white sugar
- 1 cup brown sugar, firmly packed
- 1/2 butter (1 stick)
- 2 eggs
- 1/2 tsp. salt
- 1/2 tsp cinnamon or 1 tsp vanilla.
- Milx above, add moistened oatmeal and stir.
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp baking powder
Blueberry Banana Key Lime Muffins

Preheat the oven to 375 degrees
- For Sprinkling:
- 2 1/4 cup flour
- 2 tsp baking powder
- 1/2 tsp salt
- 2 large ripe bananas, mashed
- 2 eggs
- 2/3 brown sugar
- 1/2 cup butter, melted
- 1 tbsp vanilla
- Zest of 2 key limes
- Juice from the 1 key lime
- 1 cup of blueberries
- Zest of 1 key lime
- 2 tbsp sugar
Tortilla Taco Salad

Heat oven to 400°F. To make tortilla bowls, cut 6 (25x12-inch) sheets of foil
- 6 Old El Paso® flour tortillas for burritos, 8 inch (from 11-oz package)
- 1 container (18 oz) refrigerated taco sauce with seasoned ground beef
- 1 can (15 oz) pinto beans, drained
- 2 tablespoons sweet-spicy French dressing
- 1 1/2 cups shredded lettuce
- 3/4 cup chopped tomato (1 medium)
- 3/4 cup shredded Mexican or taco-seasoned cheese blend (3 oz)
- Old El Paso® taco sauce, if desired
- Instead of the Mexican cheese blend, you can use hot pepper Monterey Jack cheese or Colby Monterey Jack cheese.
Creamy Green Bean Casserole with Hand-Breaded Onions

Yields approximately 8 servings
- Oven “Fried” Onions:
- – 1 large onion
- – 1/2 cup all-purpose flour
- – 3/4 cup Panko-style bread crumbs
- – 1/2 tsp salt
- – 1/4 tsp ground black pepper
- – 1 large egg
- – 1 tbsp milk
- Green Bean Casserole:
- – 1 tbsp 1 tsp salt, divided
- – 1 lb fresh green beans, rinse, trimmed and halved
- – 2 tbsp unsalted butter
- – 8 oz mushrooms, sliced
- – 1/2 tsp ground black pepper
- – 2 cloves garlic, minced
- – 2 tbsp all-purpose flour
- – 3/4 cup chicken or vegetable broth
- – 1-1/4 cups half-and-half
White Chocolate Peppermint Bark Cheesecake

Before preparing the cheesecake, make the peppermint bark (it's best to do this step a day ahead)
- Crust ingredients:
- 2 cups Oreo cookie crumbs
- 3 Tablespoons butter
- Filling ingredients:
- 3 8-oz. cream cheese, softened
- 1 cup sugar
- 4 oz. white chocolate, melted
- 1 1/2 Tablespoons flour
- 1 1/2 Tablespoons heavy cream
- 1/4 teaspoon salt
- 2 teaspoons peppermint extract
- 3 eggs
- 1 1/2 cups peppermint bark
- Mousse ingredients:
- 1/2 cup cool whip, softened
- 4 oz. cream cheese, softened
- 2 oz. white chocolate, melted
- 1 1/2 Tablespoons sugar
- 1/2 teaspoon vanilla extract
Baked Pumpkin Cheesecake from Raglan Road in Downtown Disney

Cheescake and Pumpkin Pie combined into one dessert
- Crust:
- 4 oz. digestive biscuits (a common substitute is graham crackers)
- 2 sticks butter, melted
- Spiced Topping:
- 1 medium pumpkin (3 cups of pumpkin flesh peeled, seeded and chopped. You can substitute canned pumpkin for fresh pumpkin in the same amounts)
- 1/2 tsp. ground cinnamon
- 1/2 tsp. ground cloves
- 1/2 tsp. ground nutmeg
- 1/2 tsp. ground ginger
- 1 1/2 cups cream cheese
- 1 1/4 cups solidly packed Demerara sugar (You can substitute light brown sugar)
- 3 large free-range eggs
- 1/2 tsp. vanilla extract
- 1/4 cup Baileys cream liqueur
- Honey, for drizzling
- Icing/Confectioner's sugar, for dusting
- Fresh mint sprig, to decorate
