Pina Colada Cupcakes

Cocktail meets cupcake with the tropical marriage of pineapple preserves, crunchy macaroon bits and toasted coconut
- 2 cups all-purpose flour
- 3/4 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2/3 cup butter, softened
- 1 2/3 cups sugar
- 1 teaspoon vanilla
- 2 eggs
- 1/2 cup sour cream
- 1/2 cup milk
- 6 purchased soft macaroon cookies (such as Archway brand), crumbled (1 cup)
- 1/4 cup chopped macadamia nuts
- 1 cup pineapple preserves
- 1 7.2-ounce package fluffy white frosting mix
- 1 teaspoon coconut extract
- 4 cups powdered sugar
- Toasted coconut
Chocolate Mint Fondue

Combine the chocolate and cream in the top of a double boiler set over simmering water
- 12 ounces dark chocolate, finely chopped
- 1/2 cup heavy cream
- 3 tablespoons crème de menthe or mint chocolate liqueur
Lime Cheesecake-Microwave

Combine the graham cracker crumbs with melted butter and 1 tbsp (15 mL) sugar
- 3 tbsp (50 mL) butter, melted
- 1/2 cup (125 mL) graham cracker crumbs
- 1 tbsp (15 mL) sugar
- 8 oz (250 g) cream cheese, softened
- 1/3 cup (75 mL) sugar
- zest of one lime
- 2 tbsp (25 mL) fresh lime juice
- 1 egg
Sweet Dough for Tart

This dough can be rolled or pressed into a 10 or 11 inch tart pan
- 1 1/2 cups all-purpose flour
- (spoon flour into a dry-measure cup and level off)
- 1/2 cup sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 6 tablespoons (3/4 stick) cold unsalted butter, cut into 8 pieces
- 1 large egg
- 1 large egg yolk
- 1 tablespoon water

Baked Crullers With Cherry Glaze

- Glaze:
- 1 cup bread flour *this is important!*
- 1 cup whole-wheat bread flour *again, important!*
- 1/2 tsp ground nutmeg
- 2 tsp pure vanilla extract
- 8 large eggs
- 2 cups water
- 1/4 cup sugar
- 1/2 tsp salt
- 1 cup unsalted butter
- 2 1/2 cups powdered sugar, sifted
- 5 tbsp maraschino cherry juice
- 2 tsp canola oil
- Water, as required

- nunaturals vanilla drops to taste, or 2 tbsp liquid sweetener (such as pure maple syrup or agave)
- 1/4 cup liquid virgin coconut oil
- (Or omit these first three ingredients and simply melt 1/2 cup chocolate chips instead.) (50g)
- 2 tbsp pumpkin puree (Sweet potato would work, too.) (30g)
- 2 tbsp peanut butter (You might be able to sub 2 more tbsp pumpkin for a lower-fat version. Feel free to sub another nut butter in place of the peanut butter.) (30g)
