6 Cake Frostings

Caramel, Chocolate Sour Cream, Lemon, Coffee, Vanilla & Chocolate Ganache
- Chocolate Sour Cream Frosting:
- 12 ounces semisweet chocolate, chopped
- 1 1/2 cups (3 sticks) unsalted butter, at room temperature
- 3 cups confectioners’ sugar
- 3/4 cup sour cream
- pinch kosher salt
- Chocolate Ganache Frosting:
- 1 pound semisweet chocolate, chopped
- 2 cups heavy cream
- pinch kosher salt
- Vanilla Frosting:
- 2 cups (4 sticks) unsalted butter, at room temperature
- 1 pound confectioners’ sugar (about 3 3/4 cups), sifted
- 1 teaspoon pure vanilla extract
- pinch kosher salt
- Lemon Frosting:
- Same as vanilla, except omit the vanilla extract & add
- 2 Tbs. finely grated lemon zest
- Coffee Frosting:
- Same as vanilla, except add
- 1 Tbs. instant espresso powder
- 1 Tbs. hot water
- Caramel Frosting:
- Same as vanilla, except add
- 1/2 cup prepared dulce de leche

Combine all ingredients in a medium sized bowl except salt, pepper, and vinegar
- 1 pound plum tomatoes, diced
- 1 tablespoon fresh basil, cut chiffonade
- 2 tablespoons diced sweet or white onion
- 1 tablespoon minced garlic
- 2 tablespoons shredded mozzarella
- 2 ounces of olive oil
- salt and pepper to taste
- balsamic vinegar, to drizzle

- 4 cups water

- nut milk bag, cheese cloth or clean dish towel
- Coconut Flour Ingredients and Equipment:
- The pulp left over from making the coconut milk above.
- Baking sheet (do not use cooking spray – parchment paper is fine)

Beef Bourguignon

Serves 6-8
- 3 pounds stew beef, cubed
- 1 pound farfalle bow-tie pasta
- 2-3 cups beef stock
- 3 cups red wine (cabernet)
- 5 carrots, chopped
- 4 slices bacon, cut into strips
- 4 cloves garlic, minced
- 2 onions, finely chopped
- 2 bay leaves
- 3 tablespoons all-purpose flour
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon tomato paste
- 1 teaspoon dried thyme
- 1/2 teaspoon rosemary
- 1/2 teaspoon cloves
- kosher salt and freshly ground pepper, to taste

Make crust: In a large bowl, combine graham cracker crumbs with butter and stir until combined
- 3 c. finely crushed graham crackers
- 12 tbsp. butter, melted
- 2 15-ounce cans crushed pineapple
- 2 c. heavy cream
- 8 oz. cream cheese, softened
- 1 tbsp. sugar
- 1/2 c. unsweetened coconut flakes, toasted

An easy, and super moist, no-mixer muffin bursting with the flavor of bananas and apples
- 3 Ripe bananas, smashed
- 2 medium apples, peeled, fine chopped
- 1/3 c. Melted butter
- 1 c. Sugar
- 1 Egg, beaten
- 1 1/2 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/2 c. all-purpose flour
- 1 1/2 teaspoon cinnamon
Eggnog Cranberry Bread

Preheat the oven to 350 degrees F
- 2 1/4 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon freshly grated nutmeg
- 2 large eggs
- 1 cup granulated white sugar
- 1 cup eggnog
- 1/2 cup salted butter, melted
- 1 teaspoon vanilla
- 3 cups fresh cranberries
Kahlua Mudslide Cupcakes

Kahlua Mudslide Cupcakes feature Kahlua, Baileys Irish Cream and vodka and are topped with frosting that features
- For the cupcakes:
- 1 box chocolate cake mix
- 3 eggs
- 1/2 cup vegetable oil
- 1/2 cup vodka
- 1/2 cup Kahlúa
- 1/4 cup Baileys Irish Cream
- 1 tablespoon espresso powder (instant coffee). Actual espresso works, too.
- For the frosting:
- 1 1/2 sticks butter (12 tablespoons)
- 4-5 cups confectioners' sugar
- 1 tablespoon Kahlúa
- 1 tablespoon Baileys Irish Cream
- 1 tablespoon vanilla extract
- Chocolate sprinkles (optional)
Mango Salad

Place coconut in a frying pan or wok (no oil required)
- SALAD DRESSING:
- 2 firm unripe mangoes (mangoes may be green or red-orange in color)
- 1/4 cup dry shredded unsweetend coconut (the kind you use for baking)
- 2 cups bean sprouts
- 1/2 cup chopped fresh coriander
- 3-4 spring onions, sliced
- Handful of peanuts or cashews, left whole or roughly chopped
- 1/3 cup fresh basil
- Optional: 1 cup cooked chicken or shrimp, or fried tofu if vegetarian/vegan (cut into small cubes)
- Optional: 1 fresh-cut red chili
- 3 Tbsp. fish sauce, OR 4 Tbsp.soy sauce if vegetarian/vegan
- 1/4 cup freshly-squeezed lime juice
- 2 Tbsp. brown sugar, or more to taste
- 1-2 tsp. Thai chili sauce, OR substitute 1/3 to 1/2 tsp. dried crushed chili (chili flakes)
