  • 3 cups confectioners’ sugar
  • 3/4 cup sour cream
  • pinch kosher salt
  • Chocolate Ganache Frosting:
  • 1 pound semisweet chocolate, chopped
  • 2 cups heavy cream
  • pinch kosher salt
  • Vanilla Frosting:
  • 2 cups (4 sticks) unsalted butter, at room temperature
  • 1 pound confectioners’ sugar (about 3 3/4 cups), sifted
  • 1 teaspoon pure vanilla extract
  • pinch kosher salt
  • Lemon Frosting:
  • Same as vanilla, except omit the vanilla extract & add
  • 2 Tbs. finely grated lemon zest
  • Coffee Frosting:
  • Same as vanilla, except add
  • 1 Tbs. instant espresso powder
  • 1 Tbs. hot water
  • Caramel Frosting:
  • Same as vanilla, except add
  • 1/2 cup prepared dulce de leche

  • 2 Tbsp. brown sugar, or more to taste
  • 1-2 tsp. Thai chili sauce, OR substitute 1/3 to 1/2 tsp. dried crushed chili (chili flakes)
